Coquito Base

Combine dairy and coconut
Pour the evaporated milk, sweetened condensed milk, canned coconut milk, and cream of coconut into a large mixing bowl or a blender pitcher. Ensure the cans are well shaken before opening to incorporate solids.

Blend until smooth
Using an immersion blender, countertop blender, or whisk, blend the dairy and coconut liquids until completely smooth and homogenous, about 30–45 seconds in a blender (longer if very cold).

Add rum
Pour in the white rum and, if using, up to 2 fl oz dark rum for depth. Stir or pulse briefly in the blender just until incorporated (10–15 seconds). Taste cautiously — alcohol will mellow when chilled.

Add extracts and spices
Add the vanilla extract, ground cinnamon, ground nutmeg, and the optional pinch of ground cloves to the blended mixture. Pulse or whisk to evenly distribute the spices, about 10–15 seconds.

Adjust sweetness and spice
Taste the mixture. If you prefer it sweeter, stir in maple syrup or simple syrup 1 tablespoon at a time until desired sweetness is reached (up to 2 TBS). If spice intensity is low, add a little more ground cinnamon or nutmeg, keeping in mind spices intensify slightly as the coquito rests.

Refrigerate for best texture and flavor
Refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and the beverage to thicken slightly. Coquito will continue to mellow and improve up to 3–5 days.

Shake before serving
Before serving, shake the bottle vigorously to reincorporate any settled solids and re-emulsify the mixture. The coquito may separate in the fridge; shaking restores a smooth texture.

Store coquito refrigerated for up to 5–7 days. Shake well before each use. If you prefer alcohol-free coquito, omit rum and increase refrigeration time; consume within 3–4 days.
