Prepare glass
Choose a large wine glass or a stemmed cocktail glass. Using the orange peel, rub the outside of the rim then the inside to lightly oil it, then press the outer rim into the citrus sugar to create a thin sugared rim. Set the glass aside.

Build and chill
Fill a cocktail shaker with the ice cubes. Pour in 2 oz cognac (or brandy), 0.5 oz orange curaçao, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and add 2 dashes of Angostura bitters.

Shake
Secure the shaker and shake vigorously for 12–18 seconds, until the outside of the shaker is well chilled and slightly frosted. This both chills and dilutes the cocktail appropriately.

Strain and serve
Double-strain the mixture through a Hawthorne or fine mesh strainer into the prepared sugared glass. If you prefer a more historic presentation, strain into the glass with a small ice cube or a large single clear cube.

Garnish
Express the oils of the remaining orange peel over the drink by holding the peel over the glass and giving it a quick snap so oils spray across the surface; then drop the twisted peel into the drink or hang it on the rim as a garnish.
