Somali Beef Wrap

Somali-style pastries stuffed with spiced meat or vegetables.

Sambusa

Pour 4 cups of water into a medium saucepan and bring it to a gentle simmer over medium heat.

Bring water to a simmer

Add 3 tsp black tea leaves (or 3 tea bags) and 2 tbs sugar to the simmering water. Stir briefly to combine.

Add tea and sugar

Add the lightly crushed 6 cardamom pods, 4 cloves, 1 cinnamon stick, and 1 tbs thinly sliced fresh ginger to the pot. If using peppercorns, add them now.

Add whole spices and ginger

Reduce heat to low and let the tea and spices simmer gently for 8–10 minutes, uncovered or partially covered, allowing the spices to infuse and the liquid to reduce slightly. Stir once or twice to prevent sticking.

Simmer to extract flavors

If using fresh mint or a small amount of green tea for herbaceousness, add 1 tsp now and simmer an additional 1 minute. Do not over-steep to avoid bitterness.

Add optional mint or green tea

Raise the heat slightly and pour in 1 cup of whole milk or evaporated milk. Bring the mixture back to a gentle simmer (do not boil vigorously) and simmer for 2–3 minutes so the milk takes on the spice flavors. Taste and add more sugar if desired.

Add milk and finish brewing

Remove the pan from heat. Using a fine-mesh strainer, strain the tea into a teapot or directly into cups to remove tea leaves, spices, and ginger. Serve hot.

Strain and serve

If desired, garnish each cup with a light sprinkle of ground cardamom or a small mint leaf. Adjust sugar to taste at the table.

If not pre-sliced, place beef in the freezer for 20–30 minutes to firm slightly, then slice thinly across the grain into strips about 1/4 inch thick.

Prepare and slice beef

Heat a large skillet or cast-iron pan over medium-high heat. Add 2 tbs vegetable oil and swirl to coat.

Add the sliced onion and sauté 5–7 minutes until soft and starting to brown at the edges.

Add the minced garlic and grated ginger; cook 30–45 seconds until fragrant.

Push the onion mixture to the side, add the beef strips in a single layer. Let sear without moving for 1 minute, then stir and cook until beef is browned but still tender, about 3–4 minutes total depending on thickness.

Sprinkle the cumin, coriander, cardamom, black pepper, and 1 tsp salt over the beef and onions. Stir to coat and cook 1 minute to toast the spices.

Stir in 1 tbs tomato paste, then add 1/4 cup water or beef stock to deglaze the pan. Scrape up browned bits and simmer 1–2 minutes until sauce clings to the beef.

Remove from heat and stir in 1 tbs lemon juice. Taste and adjust salt/pepper as needed. Keep warm while you prepare sauces and bread.

In a small bowl combine 1 cup plain yogurt, 2 tsp mayonnaise, 1 tsp minced garlic, 1 tsp lemon juice, 1/4 tsp salt and 1/4 tsp black pepper. Whisk until smooth.

Taste and adjust: add a little more lemon for brightness or a pinch more salt if needed. Chill until ready to use.

In a blender or food processor combine 1/2 cup cilantro, 1/8 cup parsley (if using), 1/2 green chili (seeded for milder heat), 1 tbs lemon juice, 2 tsp olive oil and 1/4 tsp salt.

Blend until smooth, adding 1–2 tbs water if necessary to reach a drizzleable consistency. Adjust salt or lemon to taste.

Warm the lavash or tortillas: heat a large dry skillet over medium heat. Brush each flatbread lightly with melted butter or oil and warm 20–30 seconds per side until pliable and lightly golden. Keep wrapped in a clean towel to stay warm.

Lay a warmed flatbread on a work surface. Spread a couple of tablespoons of the garlic yogurt sauce down the center (reserve some for serving).

Place about 1/4 of the beef filling down the center of the flatbread in a long line.

Top the beef with shredded lettuce or cabbage, sliced tomatoes, cucumber, and a few cilantro leaves. Drizzle with a spoonful of the spicy cilantro sauce if using.

Fold the sides of the flatbread over the filling and roll tightly from the bottom to form a wrap. If desired, sear the wrap seam-side down in a dry skillet 1 minute to seal and create a light crust.

Slice each wrap in half on the diagonal and serve immediately with extra garlic yogurt and spicy cilantro sauce on the side.

In a large mixing bowl, combine 2 cups whole wheat flour and 1 tsp salt. Mix thoroughly so salt is evenly distributed.

Combine dry ingredients

Add 1 tablespoon vegetable oil or melted ghee to the flour and rub it in with your fingertips until the mixture looks slightly crumbly. This helps make the chapatis soft.

Add fat

Gradually add approximately 3/4 cup warm water, a few tablespoons at a time, while mixing with your other hand or a spoon. Bring the dough together when it becomes shaggy.

Add water and form dough

Turn the dough onto a lightly floured surface and knead for 6–8 minutes until the dough is smooth, soft, and pliable. If dough feels dry, add up to 1–2 tablespoons additional warm water; if sticky, dust lightly with flour.

Knead

Place the dough back in the bowl, cover with a damp cloth or plastic wrap, and let it rest for at least 20–30 minutes at room temperature. Resting relaxes the gluten and makes rolling easier and chapatis softer.

Rest

After resting, divide the dough into 8 equal portions (for 8 medium chapatis). Roll each portion into a smooth ball between your palms.

Divide dough

Heat a heavy cast-iron skillet or nonstick tawa over medium-high heat until hot but not smoking. You can test by sprinkling a few drops of water — they should sizzle and evaporate quickly.

Preheat griddle

Lightly flour a work surface and take one dough ball. Flatten it slightly and dust with a little flour. Using a rolling pin, roll into a thin round about 6–7 inches (15–18 cm) in diameter. Keep the thickness even; avoid too much flour while rolling to prevent dryness.

Roll out chapatis

Place the rolled chapati onto the hot skillet. Cook the first side for about 20–30 seconds until small bubbles form and the underside shows pale brown spots.

First side

Flip the chapati and cook the second side for another 20–30 seconds. You should see some puffing begin and brown spots appearing.

Second side

Flip again and press gently with a clean kitchen towel or spatula; the chapati should puff fully. Optionally, brush the cooked chapati lightly with 1/4 teaspoon oil or ghee per piece for extra softness and flavor. If desired, you can finish directly over an open flame for a second or two using tongs to achieve little charred spots — be careful not to burn.

Final puff and finish

Stack cooked chapatis in a clean cloth or an insulated container to keep them soft while you cook the remaining ones.

Keep warm

Serve chapatis hot with dips, curries, chutneys, or pickles of your choice. They are best eaten within 1 hour for maximum softness; if storing, cool completely and keep in an airtight container for up to 1 day or freeze.

Rinse the rice: place 3 cups rice in a fine mesh sieve or bowl and rinse under cold running water until water runs almost clear to remove excess starch.

Soak the rice in 4 cups cold water for 20–30 minutes while you prepare the other components. Drain and set aside.

Season the meat pieces with 1 tsp salt and 1 tsp black pepper. Let rest 5 minutes.

Heat 2 tablespoons oil in a heavy-bottomed pot or Dutch oven over medium-high heat. When hot, add meat in a single layer (work in batches if necessary) and brown on all sides about 5–7 minutes total. Remove browned meat and set aside. Leave rendered fat in the pot for flavor.

Reduce heat to medium. Add 1 tablespoon oil or ghee if pot is dry. Add the sliced onion (1 cup) and sauté until soft and beginning to brown, about 6–8 minutes. Stir frequently so onions caramelize evenly.

Add minced garlic (3 cloves) and chopped tomato (or 1/2 cup canned crushed tomatoes) and cook 2–3 minutes until tomato softens.

Stir in carrots (2 cups), diced green pepper (if using), and potato cubes (if using). Cook 4–5 minutes to begin softening vegetables.

Add the cumin (1 tsp), coriander (1 tsp), turmeric (1 tsp), ground cloves or allspice (1 tsp), and optional berbere or chili powder (1 tsp). Toast spices with the vegetables for 1 minute to bloom flavors.

Return the browned meat to the pot along with any accumulated juices. Add the crushed cardamom pods, cinnamon stick, and whole cloves (if using) for extra aroma.

Pour in up to 1 cup broth (or replace part of the 4.5 cups rice-cooking water) and scrape up any browned bits from the bottom. Bring mixture to a gentle simmer, cover, and cook until meat is nearly tender (20–25 minutes for small cubes of beef/lamb; adjust time for tougher cuts). If meat becomes tender faster, proceed; if not, simmer longer with lid partially ajar and a splash more liquid as needed.

Once the meat is nearly tender and vegetables are softened, remove whole spices that you prefer not to serve (optional: fish out cinnamon stick; cardamom pods may be left). Taste and adjust seasoning with additional salt and pepper as needed.

Spread the drained rice evenly over the meat and vegetable mixture in the pot; do not stir. Gently pour 4.5 cups hot water (or a mix of water and broth totaling 4.5 cups) over the rice so it is fully covered. Add the 1.5 tsp finishing salt and 1 tsp black pepper distributed over the rice.

Drizzle the remaining 2 tablespoons oil or ghee over the rice in a few thin streams to help separate grains and add flavor.

Bring the pot to a simmer on medium-high just until you see bubbles at the edges, then reduce heat to low. Cover tightly and cook undisturbed for 18–22 minutes, or until rice is cooked through and liquid is absorbed.

Turn off heat and let the pot rest, covered, for 10 minutes to steam. This helps firm the rice and finish cooking gently.

After resting, remove the lid and use a fork to gently fluff and combine the rice, meat, and vegetables, taking care to lift from the bottom so meat distributes evenly.

Sprinkle chopped cilantro or parsley and the fried onions over the top. Optionally squeeze lemon wedges over portions for brightness.

Serve Bariis Isku Dar hot, family-style on a large platter or in individual bowls. Offer extra fried onions and lemon on the side.

In a large bowl whisk together 2.5 cups flour and 0.5 tsp salt. Stir in 2 tbs vegetable oil. Gradually add 3/4 cup warm water, mixing with your hand or a wooden spoon until a shaggy dough forms.

Make the dough

Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and elastic. If dough is sticky add up to 1–2 tbs more flour; if too dry add a teaspoon of water at a time.

Place dough in a lightly oiled bowl, cover with a damp towel or plastic wrap and rest 30 minutes. This relaxes the gluten and makes rolling easier.

After resting, divide dough into 12 equal pieces (about 1 1/2" balls). Keep unused pieces covered. On a lightly floured surface roll each ball into a thin circle about 5–6 inches in diameter (or roll into small rectangles for a triangular fold).

Divide and roll

Heat 2 tbs vegetable oil in a skillet over medium heat. Add 1/2 cup finely chopped onion and sauté 3–4 minutes until softened and translucent. Add 2 tsp minced garlic, 1 tsp grated ginger and optional chopped chili; cook 30–45 seconds until fragrant.

Cook aromatics

Add 1 cup ground beef or lamb, breaking it up with a spatula. Cook 5–6 minutes until no longer pink and starting to brown.

Brown the meat

Stir in 1 tsp ground cumin, 1/2 tsp ground coriander, 1/4 tsp turmeric, 1/4 tsp black pepper, 3/4 tsp salt and 1 tbs tomato paste. Cook 1–2 minutes to bloom spices.

Add spices and tomato

If mixture seems dry, add up to 2 tbs water. Reduce heat and simmer 2–3 minutes until mixture is fairly dry (not runny). Stir in 2 tbs chopped cilantro. Taste and adjust salt. Let filling cool slightly before filling wrappers.

Simmer and finish

Heat 2 tbs oil in a skillet over medium heat. Add 1/2 cup chopped onion and sauté 3–4 minutes until softened. Add 1 tsp minced garlic and cook 30 seconds.

Cook vegetables

Add 1 cup diced/mashed potato, 1/2 cup peas and 1/4 cup diced carrot. Stir in 1 tsp ground cumin, 1/2 tsp ground coriander, 1/4 tsp turmeric and 3/4 tsp salt. Cook, stirring, 4–6 minutes until vegetables are heated through and flavors combine. If filling is too dry, add a tablespoon of water.

Add veg and spices

Stir in 1 tbs chopped cilantro, taste and adjust seasoning. Allow to cool before filling wrappers.

Finish

Make a glue by mixing 2 tbs flour with 3 tbs water to a smooth paste; set aside in a small bowl.

Prepare sealing slurry

Place one rolled wrapper on your work surface. Put about 1.5–2 tbs of filling near the edge of the circle (or rectangle). Fold the edge over the filling to form a cone/triangle and continue folding into a triangular parcel, sealing the final edge with a brush of the flour slurry. Press edges firmly so there are no gaps. Repeat for remaining wrappers and filling.

Form sambusa

Pour oil for frying into a heavy saucepan or deep skillet to a depth of about 1"–1.5" (or use a deep fryer). Heat to 350°F (175°C). If you don't have a thermometer, test with a small piece of dough — it should sizzle and brown in about 30–45 seconds.

Heat oil

Fry 3–5 sambusas at a time (do not overcrowd) for 2.5–4 minutes, turning occasionally, until evenly golden brown and crisp. Adjust heat as needed to avoid burning; maintain oil around 325–350°F for even cooking.

Fry sambusas

Use a slotted spoon to transfer sambusas to a paper towel–lined plate to drain. Let rest 2 minutes — filling will be hot. Serve warm with tamarind chutney, cilantro chutney, yogurt sauce or lemon wedges.
