Rinse and cook rice

Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold water, stirring with your hand, until the water runs nearly clear (about 3–4 minutes). Drain 10–15 minutes. Combine the rinsed rice and 2.2 cups water in a rice cooker or pot. If using a pot, bring to a boil, reduce to very low heat, cover tightly and cook 12 minutes. Turn off heat and let rest, covered, for 10 minutes.

Season rice

While rice cooks, warm 3 tbs rice vinegar, 1.5 tsp sugar and 1 tsp fine sea salt in a small saucepan or microwave just until the sugar dissolves; do not boil. Transfer cooked rice to a wide shallow bowl (hangiri or large mixing bowl). Pour the vinegar mixture over rice and gently fold with a wooden paddle or spatula using cutting and fanning motions to cool the rice to near room temperature and give it a glossy finish (about 5–8 minutes). Cover rice with a damp towel to keep moist while you prepare topping.

Prepare tuna: Pat 10 oz sushi-grade tuna dry with paper towels. Dice into small, even 1/4-inch pieces and place in a chilled bowl.

Make sauce and mix: In a small bowl combine 3 tbs Japanese mayonnaise, 1 tbs sriracha, 1/2 tbs gochujang, 1/2 tsp toasted sesame oil, 1/2 tbs soy sauce, 1 tsp fresh lime juice and 1/4 tsp kosher salt. Taste and adjust heat or salt as desired. Fold the sauce gently into the diced tuna until evenly coated. Stir in 2 tbsp thinly sliced scallions, 1 tsp toasted sesame seeds, and 1/2 cup crispy tempura flakes (tenkasu) or panko crisps; the flakes add texture — reserve a small pinch to top each nigiri after assembly.

Chill briefly: Cover and refrigerate the mixed spicy tuna for 10–15 minutes to let flavors meld and to keep the fish firm for shaping. Keep chilled until ready to assemble.

Nigiri Assembly & Garnish

Prepare your work area: Wet a small bowl of water with a splash of rice vinegar nearby to wet hands (prevents sticking). Place seasoned sushi rice and spicy tuna within reach. Have wasabi and optional nori strips ready.

Shape rice: With wet hands, take about 2 tbs (roughly 20–25 g) of sushi rice and form an oblong mound (approximately 1½ inches long) using gentle pressure — compress firmly enough to hold shape but not so tight that rice becomes dense. Repeat to make 8 rice mounds (servings yield 8 nigiri).

Apply wasabi and top: Lightly smear a small amount (~1/8 tsp) of prepared wasabi on the top center of each rice mound. Using a spoon, place about 1 to 1¼ tbs of the crispy spicy tuna mixture on top of each rice mound, pressing gently to adhere. If using nori strips, wrap a 1/2-inch nori strip around the middle of the nigiri to secure the topping; press ends together on the underside so they stick.

Finish and serve: Sprinkle the reserved pinch of tempura flakes and an additional tiny pinch of sliced scallion on each piece for crunch and color. Arrange nigiri on a platter with pickled ginger and small dish of soy sauce for dipping. Serve immediately for best texture — the crispy elements are best fresh.

Storage note: If not serving right away, keep assembled nigiri covered and chilled up to 30 minutes. Avoid long storage as the crispy flakes will soften and raw tuna quality declines.
