Method
Cook Edamame
Boil
Bring 4 cups water and 1 tablespoon coarse kosher salt to a rapid boil in a medium saucepan. Add 1 cup frozen edamame and cook until bright green and tender, about 3–5 minutes for shelled or 4–6 minutes for in-pod edamame. Stir once to separate pieces and ensure even cooking.
Drain the edamame in a colander and immediately transfer to a bowl of ice water (optional) to stop cooking and preserve color, then drain thoroughly. If you prefer served warm, skip the ice bath and drain well.
Make Garlic-Lime Togarashi Dressing
In a small skillet over medium-low heat, warm 2 teaspoons neutral oil for about 20 seconds. Add 1 finely minced garlic clove and sauté gently until fragrant and just turning golden, about 20–30 seconds — do not brown aggressively (bitter). Remove from heat.
Stir in 1 teaspoon roasted garlic oil to the warm oil and garlic, then add 1 teaspoon fresh lime zest and 1 teaspoon lime juice. Mix to combine and allow flavors to meld for 30 seconds.
Add 3 teaspoons togarashi and stir to create a slightly paste-like seasoning. Taste and adjust: if too spicy, add an extra 1/2–1 teaspoon neutral oil; if too tart, add a pinch more sugar or a drop more oil. Season with salt and freshly ground pepper to taste.
Combine & Finish
Place the drained warm (or room-temperature) edamame in a mixing bowl. Pour the garlic-lime togarashi dressing over the edamame and toss thoroughly so every piece is coated. Use the back of a spoon to press any togarashi paste onto the edamame for better adhesion.
Taste and adjust seasoning: add more lime juice for brightness, more togarashi for heat, or a pinch of salt if needed.
Transfer to a serving bowl. Garnish with 1 teaspoon toasted sesame seeds and an extra lime wedge. Serve warm or at room temperature as a starter.
