In a large pot, heat 16 cups of water to 165°F (73°C). Add the Pilsner malt and hold the temperature at 150°F (65°C) for 60 minutes. Stir occasionally.

Mashing

After mashing, rinse the grains by sparging with hot water to collect the wort. Aim for about 6 gallons of wort.

Sparging

Bring the wort to a boil and add the Saaz hops. Boil for 60 minutes, adding more hops at 30 minutes for added bitterness.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter and allow it to ferment at 50-55°F (10-13°C) for 2 weeks.

Fermentation

After fermentation, dissolve the priming sugar in a small amount of water and add it to the bottling bucket. Transfer the beer to the bottling bucket and fill sanitized bottles, capping them afterward.

Bottling

Let the bottles condition at room temperature for 1-2 weeks before refrigerating. Your Kin Pilsner is now ready to enjoy!
