Strawberry Shake

Harvest ripe Merlot grapes and remove any stems or leaves. Crush the grapes to release the juice.

Harvest and Prepare Grapes

Transfer the crushed grapes into a fermentation vessel. Add the wine yeast and sugar, stirring gently. Cover with a clean cloth and let it ferment for about 2 weeks, stirring daily.

After fermentation, press the mixture to separate the juice from the solids. Transfer the juice to a clean fermentation vessel.

Pressing

Add malolactic bacteria to the wine and allow it to undergo malolactic fermentation for 1-2 months.

Malolactic Fermentation

If desired, add oak chips and transfer the wine to a barrel or glass carboy. Age for at least 6 months to develop flavors.

Aging

Once aging is complete, siphon the wine into clean bottles, adding a small amount of sulfur dioxide for preservation. Seal and label the bottles.
