Instructions
Prepare the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.
Mix Dry Ingredients
In a shallow dish, combine the cornmeal, flour, cayenne pepper, salt, and black pepper.
Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, pressing gently to adhere.
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
Fry the Catfish
Carefully add the coated catfish fillets to the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Po Boys
Slice the French bread or hoagie rolls lengthwise. Spread a generous amount of remoulade sauce on the inside, then layer with fried catfish, shredded lettuce, and sliced tomatoes.
Serve
Serve the catfish po boys warm, with extra remoulade on the side if desired.
