In a bowl, whisk together buttermilk, mayonnaise, bleu cheese, minced garlic, and lemon juice. Season with salt and black pepper to taste. Refrigerate until ready to use.

In a food processor, combine collard greens, Parmesan cheese, minced garlic, and pine nuts. Pulse until finely chopped. With the processor running, slowly drizzle in olive oil until smooth. Season with salt and black pepper to taste.

Lay a large lettuce leaf flat, place a portion of the cooked beef tips in the center, drizzle with buttermilk bleu cheese dressing, and top with a spoonful of collard green pesto. Fold the sides of the lettuce over the filling and enjoy!
