    Soak beans

    Rinse 1 cup Rancho Gordo beans under cold water, removing any debris. Place beans in a bowl, cover with 3–4 cups cold water, and soak for 6–8 hours or overnight. If short on time, use the quick soak method: cover with water, bring to a boil 2 minutes, turn off heat and let sit 1 hour.

    Cook beans

    Drain soaked beans and transfer to a medium saucepan. Add 4–5 cups fresh water (enough to cover by ~1–2 inches). Bring to a gentle boil, skim any foam, then reduce to a simmer. Cook until tender but not falling apart — about 45–70 minutes depending on bean variety. Add salt toward the end of cooking (about 1/2 tsp) to avoid toughening skins. Drain, reserve about 1/4 cup cooking liquid, and cool slightly to warm.

    Make dressing

    In a small bowl combine 2 tbsp fish sauce (or 1 tbsp light soy + 2 tbsp lime juice if using soy), 3 tbsp lime juice, 1 tsp palm or brown sugar, 2 tsp roasted rice powder, and 1 tsp crushed dried bird's eye chilies (adjust to taste). Whisk until sugar dissolves. If the dressing is too sharp, add 1 tsp neutral oil and up to 1 tbsp reserved bean cooking liquid to marry flavors. Taste and adjust salt, lime, or sugar balance — nam tok should be bright, salty, slightly sweet, and nutty from rice powder.

Aromatics & Herbs

    Prepare aromatics while beans are cooling. Thinly slice 2 shallots and place them in a bowl of cold water for 5 minutes to tame sharpness, then drain well. Thinly slice 2 scallions on a bias. Roughly chop cilantro, mint, and optional Thai basil. If using fresh chile, thinly slice.

    Toss shallots, scallions, cilantro, mint, basil, and fresh chile together in a mixing bowl so they are ready to combine with beans.

Assemble & Finish

    Combine beans and herbs: Place warm, drained beans in a large bowl. Add the shallot-herb mixture and gently toss so beans remain mostly intact.

    Dress the beans: Pour the prepared dressing over the warm bean-herb mixture. Gently toss to coat evenly. If mixture seems dry, add up to 1–2 tbsp reserved bean cooking liquid, a little at a time.

    Adjust seasoning: Sprinkle 2 tsp roasted rice powder and 1/2 tsp flaky salt over the salad. Toss once more and taste — add more lime, fish sauce, or sugar as needed to reach a balanced nam tok profile (bright/sour, salty, a touch sweet, and nutty).

    Rest briefly and serve: Let the salad sit 5–10 minutes so flavors meld. Transfer to a serving plate, garnish with extra toasted rice powder and lime wedges. Serve warm or at room temperature with sticky rice or as a side.
