Bloom spices and paste
Stir in the Thai red curry paste, ground turmeric, coriander powder, and ground cumin. Cook, stirring constantly, for 1–2 minutes so the spices bloom and the paste becomes aromatic.

Add coconut milk and stock
Pour in the coconut milk and 4 cups chicken (or vegetable) stock. Stir to combine and bring to a gentle simmer.

Cook chicken (or vegetarian protein)
Add the chicken thigh pieces (or tofu/mushrooms for vegetarian). Add torn kaffir lime leaves if using. Reduce heat to medium-low and simmer until chicken is cooked through and tender, about 12–15 minutes (tofu 6–8 minutes; mushrooms 5–7 minutes). Skim any foam or excess oil from the surface if desired.

Season and finish
Stir in fish sauce (or soy sauce), palm sugar, and 1/2 teaspoon salt. Taste and adjust seasoning—add more fish/soy sauce for saltiness or sugar for balance. Remove from heat and stir in 1 tablespoon fresh lime juice. Keep broth hot over low heat while you prepare noodles and garnishes.

Prepare noodles
If using fresh egg noodles, separate and gently loosen them. If using dried, cook according to package instructions until just tender, then drain and toss with a little oil to prevent sticking. Reserve hot noodles for serving.

Fry crisp noodle garnish
Heat 1 cup vegetable oil in a small heavy saucepan or skillet to 350°F (175°C). Working in batches, add a handful of fresh egg noodles and fry briefly until puffed and deep golden, about 30–60 seconds. Remove with a slotted spoon and drain on paper towels. These will be used as the crunchy topping (about 1 cup when finished). Caution: hot oil splatters.

Assemble bowls
Divide the hot cooked noodles among 4 bowls. Ladle the hot curry broth and chicken over the noodles so each bowl gets an even amount of chicken and liquid.

Add toppings
Top each bowl with sliced pickled mustard greens, thinly sliced shallots, chopped cilantro, a handful of crisp fried noodles, and a lime wedge. Offer chili oil or fried chili crisp at the table to taste.

Serve immediately so the crisp noodle garnish remains crunchy. Encourage diners to squeeze lime and mix toppings into the broth for the classic khao soi flavor balance.
Vegetarian substitutions (optional)

If making the vegetarian version, use vegetable stock, replace fish sauce with soy sauce, and use pressed tofu or mushrooms instead of chicken. Add tofu when the broth simmers and cook until heated through (6–8 minutes). If using mushrooms, sauté them briefly with the aromatics before adding coconut milk for better texture and flavor.
