Preparing the Chips

Cut the Potatoes

Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes

Drain the potatoes and pat them dry with a clean kitchen towel.

Fry the Chips

In a deep fryer or large pot, heat vegetable oil to 325°F (160°C). Fry the potatoes in batches for about 5-6 minutes until soft but not browned. Remove them and let them drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for 2-3 minutes until golden brown and crisp. Season with salt to taste.

In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the mixture is smooth and slightly thick.

In a deep fryer or large pot, heat vegetable oil to 375°F (190°C).

Dip each fish fillet into the batter, allowing the excess to drip off.
