    Prepare and mix filling

    Place the ground pork in a large mixing bowl. Add grated ginger, minced garlic, sliced green onions, finely chopped cilantro, light soy sauce, rice wine, sesame oil, cornstarch, white pepper and salt.

    Using a spoon or spatula, mix ingredients firmly in one direction until combined and slightly sticky, about 1–2 minutes. This develops the protein for a tender, cohesive filling.

    Add 2 teaspoons water and continue mixing until the mixture is glossy and holds together. Taste a small pinch by cooking briefly in a microwave or skillet and adjust seasoning if necessary (add more salt or soy sauce sparingly).

Wrappers & Assembly

    Lightly dust a work surface with the flour. Keep wrappers covered with a damp towel to prevent drying.

    Scoop about 1 level tablespoon (roughly 15 g) of filling into the center of one dumpling wrapper. Amount may vary depending on wrapper size—do not overfill; leave space at edges for sealing.

    Moisten the edge of the wrapper with a little water using your fingertip. Fold wrapper in half and pinch at the center to seal, then create 3–4 small pleats on one side pressing to meet the opposite edge, finishing with a tight seal. Repeat until all filling is used (should make about 28–30 dumplings).

    Place finished dumplings on a lightly floured tray so they don't stick. If not steaming immediately, cover with a damp towel and refrigerate up to 2 hours (or freeze on tray then transfer to a bag for longer storage).

Steaming Setup

    Prepare a steamer: fill a pot or wok with about 1.2 L (1200 ml) water and bring to a gentle boil. If using a bamboo steamer, line baskets with lettuce/cabbage leaves or parchment circles; brush lightly with neutral oil to prevent sticking.

    Arrange dumplings in the steamer basket with a little space between them (they will expand slightly). Do not overcrowd—steam in batches if necessary.

    Once the water is boiling, place the steamer over the pot, cover, and steam over medium-high heat for 8–10 minutes for fresh dumplings (10–12 minutes if chilled). If dumplings were frozen, steam for 12–14 minutes, adding a minute or two until cooked through.

    To check doneness: wrappers should be translucent and filling should reach 74°C (165°F). Carefully remove dumplings with a spatula or tongs to a serving plate.

Dipping Sauce (optional)

    Whisk together soy sauce, black vinegar, sesame oil and chili oil (if using). Stir in the chopped cilantro. Taste and adjust — add more vinegar for tang or a pinch of sugar if you prefer balance.
