In a large bowl, whisk together 2 cups flour, 1 tsp sugar, 1 tsp active dry yeast, 0.5 cups warm water, and 0.5 tsp salt. Add 1 tbsp olive oil and mix until a rough dough forms. Knead 5–7 minutes on a floured surface until smooth. Cover and let rise until doubled, about 60 minutes.

Turn the risen dough onto a lightly floured surface and roll it into a 12-inch circle.

In a small saucepan over medium heat, melt 2 tbsp butter. Whisk in 2 tbsp flour to form a roux and cook 1 minute. Gradually whisk in 0.75 cup milk and 0.5 cup La Cumbre A Slice of Hefen beer until smooth. Stir in 1 cup mozzarella and 0.25 cup parmesan until melted and glossy.

In a skillet, heat 1 tbsp olive oil over medium heat. Add caramelized onions and cook until deeply golden. Add sliced mushrooms and sauté until browned and any moisture has evaporated.

Preheat oven to 475°F (245°C). Place rolled dough on a parchment-lined sheet. Brush crust with 0.5 tbsp olive oil. Spread the beer cheese sauce over the base. Top with caramelized onions, mushrooms, minced garlic, and then mozzarella and parmesan.

Assemble the flatbread

Bake 12–15 minutes until crust is golden and cheese is bubbly. Remove from oven and scatter fresh arugula on top. Finish with a light drizzle of olive oil, a pinch of black pepper, and a touch of salt to taste. Slice into wedges and serve.
