A fusion of our two favorite things. Butter, sautéed garlic, onion, and the famous ingredients, Harp Lager and Irish cheddar. Finished with cream cheese and Dijon mustard. Garnished with bacon crumbles and chives.

In a large pot, melt the butter over medium heat. Once melted, add the minced garlic and diced onion. Sauté for about 5 minutes, or until the onion becomes translucent and the garlic is fragrant.

Sauté the Aromatics

Pour in the Harp Lager and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes to let the flavors meld.

Add the Beer

Gradually stir in the shredded Irish cheddar, allowing it to melt into the soup. Stir continuously to ensure it blends smoothly.

Incorporate the Cheese

Add the softened cream cheese and Dijon mustard to the pot. Stir well until the cream cheese is fully incorporated and the soup is creamy.

Finish with Cream Cheese and Mustard

Taste the soup and season with salt and black pepper as needed. Adjust to your flavor preference.
