Trim and Blanch

Rinse 1 lb fresh green beans and trim the stem ends (snap or cut). Bring a large pot of water to a rolling boil and add 1 tablespoon kosher salt. Add the beans and blanch for 3 minutes until bright green and just tender-crisp.

Prepare an ice bath (large bowl of cold water and ice). Immediately transfer the blanched beans to the ice bath to stop cooking. Let sit 2 minutes, then drain and pat dry on a clean towel or paper towels. Set aside.

Seasoning & Sauce

Cook Aromatics

In a large skillet over medium heat, melt 2 tablespoons unsalted butter with 1 tablespoon olive oil. When the butter foams, add 1/2 cup finely diced onion and sauté 4–5 minutes until softened and beginning to brown at the edges. Add 2 minced garlic cloves and cook 30–45 seconds until fragrant, stirring constantly to prevent burning.

Add Spices and Sauces

Stir in 1/2 teaspoon smoked paprika, 1/2 teaspoon ground black pepper, and 1/4 teaspoon crushed red pepper flakes (if using). Add 1 teaspoon soy sauce, 1 teaspoon apple cider vinegar, 1 teaspoon fresh lemon juice, and 1/2 teaspoon sugar or honey. Cook 30–45 seconds to meld flavors, scraping any browned bits from the pan.

Finish the Green Beans

Add the drained green beans to the skillet and toss to coat in the seasoned butter-onion mixture. Cook, stirring occasionally, 3–4 minutes until beans are heated through and edges pick up a little color but remain crisp-tender. Taste and season with approximately 1/2 teaspoon kosher salt (adjust to taste).

Garnish and Serve

Remove skillet from heat and stir in 2 tablespoons chopped fresh parsley. Transfer to a serving dish and serve warm as a side. If desired, finish with an extra squeeze of lemon juice or a small pat of butter for shine.
