Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Add the ground beef and break it up with a spatula. Cook until browned, about 6–8 minutes.

Push beef to the side, add the remaining 1 tablespoon olive oil if pan is dry, add diced onion and cook until softened and translucent, 4–5 minutes. Stir in minced garlic and cook 30 seconds until fragrant.

Stir in tomato paste and cook 1 minute. Add diced tomatoes and beef broth, scraping any browned bits from the bottom of the pan.

Season with chili powder, cumin, smoked paprika, brown sugar, salt, and black pepper. Stir to combine. Reduce heat to low and simmer gently for 10–12 minutes to thicken, stirring occasionally.

If using beans, fold in drained beans in the last 5 minutes of simmering to heat through and absorb some sauce. Taste and adjust salt/seasoning. Keep warm while assembling nachos.

Jalapeño Cheese Sauce

In a medium saucepan over medium heat, melt 2 tablespoons butter until foaming. Whisk in 2 tablespoons flour and cook, whisking constantly, 1–2 minutes to make a blonde roux (don’t let it brown).

Gradually whisk in 1 1/2 cups whole milk, removing lumps, and bring to a gentle simmer. Cook, stirring, until mixture thickens slightly, about 3–4 minutes.

Reduce heat to low. Whisk in 2 oz cream cheese until smooth. Add shredded cheddar and pepper jack a handful at a time, stirring until fully melted and smooth.

Stir in chopped pickled jalapeños, ground mustard, hot sauce, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust heat or salt as desired. Keep warm on the lowest heat or transfer to a small insulated container for assembly.

Nacho Assembly & Baking

Preheat oven to 425°F (220°C). Line a rimmed sheet pan with parchment or foil for easy cleanup.

Arrange half of the tortilla chips in an even single layer across the sheet pan, allowing some chips to overlap to create 'catch' pockets for toppings.

Spoon half of the warm chili over the chips in dollops, focusing on even distribution. Drizzle about half of the jalapeño cheese sauce over the chili and chips. Scatter about half of the pickled jalapeño slices on top.

Add the remaining tortilla chips on top, then repeat: dollop remaining chili, drizzle remaining cheese sauce, and scatter remaining pickled jalapeños.

Place sheet pan in the preheated oven and bake 6–8 minutes, until chips at edges are lightly browned and cheese sauce is bubbling in spots. Watch carefully to avoid burning.

Remove from oven. Immediately sprinkle shredded lettuce evenly across the hot nachos so it wilts just slightly at the edges (this keeps some crunch). Scatter pico de gallo, sliced green onions, cilantro, and crumbled queso fresco if using.

Finish with dollops or a drizzle of sour cream and serve with lime wedges on the side. Serve hot on the sheet pan or transfer to platters. Provide extra jalapeño cheese sauce and pico on the side if desired.
