    Combine and shake

    Fill a cocktail shaker with 6-8 large ice cubes. Add 2 oz white rum, 0.5 oz dark rum, 0.75 oz fresh lime juice, 1.5 oz fresh pineapple juice, 0.75 oz passion fruit purée, 0.5 oz orgeat, and 0.25 oz simple syrup. Secure the lid and shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosted.

    Bitters integration

    Open the shaker, add 2 dashes of Angostura bitters into the mixture in the shaker, quickly give one brief (1–2 second) shake to incorporate the bitters without over-diluting.

Aromatics & Garnish

    Prepare glass

    Fill a double Old Fashioned or tall tiki glass with crushed ice (about 1 cup) leaving a little headspace at the top.

    Strain & build

    Double-strain the shaken cocktail over the crushed ice using a Hawthorne strainer and fine mesh strainer to remove pulp and tiny ice shards. Let the drink settle slightly on the ice.

    Finish and garnish

    Grate about 1 tsp fresh nutmeg over the top for aroma. Slap the mint sprig between your palms to release oils and tuck it into the drink near the rim. Add a pineapple wedge or wheel on the rim. Optionally add an extra 1–2 drops of Angostura bitters on the foam/ice surface for a decorative aroma. Serve with a short straw and enjoy.
