Burger Patties
Divide and form patties
Divide 2 lbs of 80/20 ground beef into six equal portions (about 5.3 oz / 150 g each). Gently form each portion into a round patty about 3/4-inch thick and slightly wider than the bun. Do not overwork the meat — handle it gently to keep burgers tender.
Create center dimple
Using your thumb, press a shallow dimple in the center of each patty to help them cook flat and prevent rising in the middle.
Season patties
Lightly brush or mist patties with 1 tablespoon Worcestershire sauce if using. Season both sides generously with kosher salt (about 1/3 tsp per side) and freshly ground black pepper so total used is 2 tsp salt and 1 tsp pepper across all patties.
Cook patties
Heat a large cast-iron skillet or griddle over medium-high heat until hot. Add 1 tablespoon oil and spread to coat. Place patties in the pan with space between them and cook for about 3-4 minutes on the first side without pressing. Flip once and cook an additional 2-3 minutes for medium-rare to medium (internal 130–140°F / 54–60°C), or longer for desired doneness. Place a cheese slice on each patty during the last 30-60 seconds of cooking and cover the pan with a lid or tent with foil to melt.
Rest patties
Transfer cooked patties to a plate and loosely tent with foil. Rest 3-5 minutes to let juices redistribute.
Brioche Buns & Condiments
Prep buns
Split 6 brioche buns in half. Spread about 1/2 teaspoon mayonnaise on the top half of each bun (total about 3 tablespoons).
Toppings
Prepare lettuce and tomato
Wash and dry 6 lettuce leaves. Slice 2 tomatoes into 6 even slices (roughly 1/4-inch each). If using red onion, separate into thin rings. Have pickle slices ready.
Assemble burgers
On the bottom bun, place a lettuce leaf, then a tomato slice. Put the rested cheeseburger patty on top. Add onion rings and 2 pickle slices if desired. Spread additional mayonnaise on the top bun if desired, then close the burger.
