Prepare

Chill a coupe or martini glass by filling it with ice and cold water; set aside. If using an egg white, separate the white from the yolk and have it ready.

Add the gin, creme de violette, fresh lemon juice, simple syrup, and egg white (if using) into a cocktail shaker.

Dry shake (no ice) vigorously for 15–20 seconds to emulsify the egg white and create foam. If not using egg white, skip the dry shake.

Add ice to the shaker (about 4 ice cubes) and shake again vigorously for 10–15 seconds to chill and properly dilute the cocktail.

Discard the ice and water from the chilled glass. Fine strain the cocktail into the chilled coupe or martini glass using a Hawthorne or julep strainer and, if desired, a fine mesh strainer to catch small ice shards and egg white solids.

Garnish with a lemon twist expressed over the drink (run the twist around the rim and drop it in) or place a maraschino cherry on a cocktail pick and rest it across the glass.
