Prepare Broccoli
Trim the broccoli crowns into large, uniform florets (about 1–1.5 inches). Pat dry with a towel so the marinade adheres well.

Make Marinade
In a medium bowl whisk together the plain yogurt, ginger-garlic paste, ground coriander, ground cumin, garam masala, smoked paprika, kashmiri chili powder, turmeric, lemon juice, olive oil, salt, and black pepper until smooth and well combined.

Marinate
Add the dried broccoli florets to the marinade and toss gently until every floret is evenly coated. Cover and refrigerate for at least 30 minutes, up to 3 hours. If short on time, marinate for 15–20 minutes at room temperature.

Preheat and choose method: For authentic smoky flavor, preheat a grill or grill pan to high heat (medium-high for stovetop). If using an oven, preheat to 475°F (245°C) with a rack in the upper third. Optionally prepare a quick stovetop smoke: line a small piece of aluminum foil with a tablespoon of neutral oil, place 1–2 teaspoons of wood chips (or 1/4 tsp instant smoked paprika if needed) on the foil, set foil in a wide stainless skillet, and heat to begin smoking.

Char or Roast
If grilling: brush grill grates with oil and place marinated florets directly on the hot grill. Cook 3–4 minutes per side until charred at edges and tender-crisp. If using oven: arrange florets on a rimmed baking sheet in a single layer and roast 15–20 minutes, turning once, until edges are browned and tops blister. If using skillet: heat 1 tbsp neutral oil over high heat, add florets in a single layer (work in batches if needed) and sear 3–4 minutes per side until charred and cooked through.

Toast and chop pistachios: if not already toasted, toast shelled pistachios in a dry skillet over medium heat 3–4 minutes until fragrant, then roughly chop. Allow to cool slightly.

Plate: Arrange the tandoori broccoli on a serving platter or individual plates. Sprinkle the toasted chopped pistachios evenly over the florets. Scatter red chili flakes to taste for heat and visual contrast.
