Pappad Baskets

Prepare baskets
Preheat the oven to 180°C (350°F). Place an inverted small oven-safe bowl or ramekin on a baking tray. Stretch each pappad gently over the bowl so it forms a shallow cup. Brush the top (outer) surface lightly with neutral oil or melted butter/ghee to encourage even crisping and color.

Bake the shaped pappads in the preheated oven for 6–9 minutes, watching closely after 5 minutes. They should become crisp and lightly golden but not burned. If you prefer stovetop, dry-toast each pappad over a low-medium flame with tongs, flipping quickly so it crisps evenly, then immediately drape over the inverted bowl to cool into a basket shape.

Once crisped and set, remove baskets carefully from the bowls and let cool on a rack. If desired, sprinkle a little salt or chaat masala inside each basket while still warm.
Coriander-Mint Chutney

Blend chutney
Combine cilantro, mint, chopped green chili, lime juice, yogurt (if using), sugar or honey, toasted cumin, salt, and 1–2 tablespoons water in a blender or food processor. Blitz until smooth, adding water a little at a time to reach a thick, spoonable sauce consistency. Taste and adjust salt, lime, or sugar. Transfer to a serving bowl and refrigerate until ready to serve.
Tamarind-Date Chutney (Sweet & Tangy)

Soften and blend
Place the pitted dates in a small bowl and pour the hot water over them. Let sit 5 minutes to soften. In a blender, combine soaked dates (with any soaking liquid), tamarind paste, brown sugar or jaggery, roasted cumin, chili powder (if using), and salt. Blend until smooth. If the chutney is too thick, add 1 tablespoon of water at a time until you reach a syrupy pouring consistency. Taste and balance sweetness/acidity as needed. Warm gently on the stove for 1–2 minutes if you prefer a slightly warmed sauce.
Coconut-Lime Chutney (Mild)

Grind coconut chutney
In a blender combine grated coconut, roasted chana dal or peanuts (if using), green chili, lime juice, salt and 1–2 tablespoons water. Grind until smooth but slightly textured — you want a creamy chutney that still has a bit of body. Adjust salt and lime. Chill until serving.
Garnish & Assembly

Arrange three pappad baskets per person on a serving plate (six total). Spoon a generous dollop of each chutney into small bowls or directly into the baskets: coriander-mint, tamarind-date and coconut-lime, offering variety.

Top each chutney-filled basket with a sprinkle of finely chopped red onion, tomatoes and a few cilantro leaves. Dust lightly with chili flakes or chaat masala if desired.

Serve immediately so pappad baskets remain crisp. Provide extra chutney on the side for dipping.
