    Prepare the cucumber

    Peel the cucumber, cut it lengthwise and scoop out the seeds with a spoon. Grate the cucumber coarsely or finely, depending on desired texture. Place grated cucumber in a fine mesh sieve or clean kitchen towel and press/ squeeze lightly to remove excess water. You want about 1 to 1 1/4 cups drained cucumber.

    Prep aromatics

    Finely mince the red onion (or grate it for milder flavor) and place in a small bowl of cold water for 5 minutes then drain to remove sharpness (optional). Finely chop cilantro and mint. If using green chili, finely mince it, removing seeds if less heat is desired.

    Mix yogurt base

    In a medium mixing bowl, whisk the plain yogurt until smooth and slightly loose. Add the drained grated cucumber, chopped cilantro, chopped mint, minced green chili (if using), and the drained or rinsed onion. Stir to combine evenly.

    Season

    Add roasted cumin powder, salt, black pepper, lemon juice, and sugar (if using) to the yogurt-cucumber mixture. Taste and adjust salt, lemon, or sugar to balance acidity and saltiness. The raita should be cool, slightly tangy, and well-seasoned.

    Optional tempering (tadka)

    For added aroma, heat 1 tsp oil or ghee in a small skillet over medium heat. When hot, add 1/2 tsp mustard seeds and let them crackle for a few seconds. Remove from heat immediately to prevent burning and pour the hot oil and mustard seeds over the raita. Stir gently to incorporate.

    Finish and chill

    Transfer the raita to a serving bowl, sprinkle a pinch of red chili flakes or cayenne on top if desired, and chill for at least 15 minutes to let flavors meld. Serve chilled as an accompaniment to smoky plates, biryani, kebabs, or grilled vegetables.

    Storage

    Keep refrigerated in an airtight container for up to 48 hours. Stir before serving; if it thickens, thin with a little cold water or milk to reach desired consistency.
