    Prepare potatoes

    Wash the potatoes and cut into 1–1.5 cm (about 1/2 inch) cubes. Leave the skins on for texture or peel if preferred.

    Par-cook potatoes

    Place cubed potatoes in a pot of salted water, bring to a boil, and simmer for 6–8 minutes until just tender but not falling apart. Drain and set aside to dry for a few minutes.

    Sear potatoes (smoke plate step)

    Heat 2 tablespoons of vegetable oil in a large heavy skillet or cast-iron pan over medium-high heat. Add the par-cooked potatoes in a single layer and sear without stirring for 3–4 minutes to develop a golden crust, then toss and sear another 2–3 minutes to brown on multiple sides. Remove and set aside on a plate.

    Temper whole spices

    Lower the heat to medium. In the same skillet, add the remaining 1 tablespoon oil. When hot, add mustard seeds and cumin seeds. Let them sizzle and pop for about 30 seconds to release aroma; if they start to burn, reduce heat.

    Cook aromatics

    Add the chopped onion and a pinch of salt. Sauté for 6–8 minutes until the onion is soft and translucent and beginning to brown at the edges. Add minced garlic and grated ginger and cook 1 minute until fragrant.

    Add ground spices

    Stir in turmeric, ground coriander, ground cumin, red chili powder, and half of the salt. Cook the spices with the onion mixture for 1–2 minutes, stirring constantly to avoid burning—this blooms the spices and deepens flavor.

    Combine tomato and deglaze

    Add the chopped tomato (or 2 tablespoons tomato paste) and cook 2–3 minutes until it softens and begins to break down. Pour in 120 ml water to deglaze the pan, scraping up browned bits; bring to a gentle simmer.

    Simmer with potatoes

    Return the seared potatoes to the pan and gently toss them with the spiced tomato mixture so they are well coated. Cover and simmer on medium-low for 6–8 minutes so flavors meld and potatoes finish cooking. Stir once halfway to prevent sticking.

    Finish seasoning

    Uncover, increase heat briefly to reduce any excess liquid if necessary. Stir in garam masala, remaining salt if needed, black pepper, and lemon juice. Taste and adjust salt, pepper, or lemon to preference. If using kasuri methi, crush it between your palms and sprinkle over now.

    Add fresh elements

    Transfer Bombay Aloo to a serving platter. Sprinkle chopped cilantro and sliced green chilies (if using) over the top. For a smoky finish consistent with the Smoke Plates section, optionally perform a quick dhungar: place a small piece of hot charcoal in a heatproof spoon, add a drop of ghee or oil, hold it over the pot to produce smoke, cover immediately for 1–2 minutes, then remove charcoal and spoon.
