Base oats

Cook oats
In a small saucepan, combine 1 cup rolled oats, 1 cup milk and 1/2 cup water. Add 1 tsp salt. Bring to a gentle boil over medium-high heat, then reduce heat to low and simmer, stirring occasionally, until the oats are creamy and tender, about 6–8 minutes.

Adjust texture
If the oats become too thick, stir in up to 2–4 tablespoons additional water or milk until you reach a consistency you like for all-day eating (slightly loose for reheating or thicker for immediate serving).

Remove the saucepan from heat. Stir in 1 tablespoon maple syrup (or honey), 1/2 tsp vanilla extract and 1/2 tsp ground cinnamon. Taste and adjust sweetness or cinnamon to your preference.

For creaminess and extra protein, whisk in 1/4 cup Greek yogurt and 1 tablespoon almond or peanut butter while the oats are still warm. Sprinkle 1 tsp chia seeds and stir; chia will help thicken slightly as oats cool. If using protein powder, whisk it into 2 tablespoons of warm oats or a few tablespoons of milk first to avoid clumping, then stir into the pot.

Divide oats into a bowl. Top with sliced banana and 1/2 cup mixed berries. Scatter 2 tablespoons toasted nuts over the top for crunch. Finish with a light pinch (1/4 tsp) flaky sea salt if desired to enhance flavor.

For chocolate notes, stir in 1/2 tsp cocoa powder with the sweetener. Adjust to taste. If you added protein powder earlier, you may need to add a little extra liquid to keep the texture creamy.
