Measure beans
Measure 6 tablespoons (about 0.375 cups or ~34 g) of organic whole bean breakfast blend for every 12 cups of finished coffee (ratio ~1:17 by weight). This yields a full carafe; scale down to ~1 tablespoon per 6 fl oz cup for single servings.

Grind
Grind the beans just before brewing. For drip coffee use a medium grind (similar to granulated sugar). For French press use a coarser grind; for pour-over use a medium-fine grind. Grind time: 20–30 seconds in a burr grinder depending on model.

Heat water
Bring filtered water to between 195–205°F (90–96°C). If you don't have a thermometer, bring to a full boil and let sit 30 seconds.

Set up brewer
If using drip or pour-over, place a clean filter in the basket and pre-wet it with hot water to remove paper flavor and preheat the brewer. Discard the rinse water.

Brew
Add the ground coffee to the filter or brew chamber. Pour or run 12 cups (about 2.8 L) of hot water over the grounds evenly. For drip machine, start the cycle. For pour-over, bloom 40–45 seconds with 60–80 ml hot water, then continue pouring slowly until 12 cups are reached. For French press, pour water, stir gently, steep 4 minutes, then press slowly.

Serve
Once brewing is complete, transfer coffee to a preheated thermal carafe or coffee urn to keep hot and fresh for a bottomless cup service. Keep on low heat or insulated to maintain 165–175°F for serving.
Optional Add-ins (per cup)

Offer add-ins at the point of service. For each 8–12 fl oz bottomless cup, provide optional milk (about 1/4 cup) or cream as preferred. Stir in 1 tsp granulated sugar or 1 tbsp simple syrup, or add sweetener to taste. For plant milks, shake before pouring.

If guests request customized strength, adjust by adding an extra 1–2 tablespoons of brewed coffee to their cup for stronger flavor or dilute with hot water for milder taste.

Ensure grinder and brewer are clean before use. Use a burr grinder for consistent particle size. Replace filters as needed. Keep spare filters and fresh beans on hand to maintain continuous bottomless service. Clean carafes and urns daily to avoid stale flavors.
