White (Vanilla) Batter

Method

White (Vanilla) Batter

    Prepare dry ingredients

    Whisk together 2 cups all-purpose flour, 2 tsp baking powder, and 1/2 tsp salt in a medium bowl. Set aside.

    Cream butter and sugar

    In a large mixing bowl, beat 1/2 cup room-temperature unsalted butter with 1 cup granulated sugar until light and fluffy, about 3–4 minutes on medium speed.

    Add eggs and vanilla

    Add the 3 large eggs one at a time, beating briefly after each addition. Scrape bowl as needed. Mix in 2 tsp vanilla extract.

    Combine wet and dry

    With mixer on low, alternate adding the dry ingredients and 1/2 cup whole milk in three additions (dry, milk, dry), beginning and ending with dry. Mix just until combined; do not overmix.

    Reserve batter

    Transfer the white batter to a separate bowl or container. This yields about two-thirds of the total batter volume for marbling balance.

Chocolate Batter (House Chocolate)

    Prepare dry ingredients

    In a medium bowl, whisk together 1 cup all-purpose flour, 3/4 cup unsweetened cocoa powder, 1 tsp baking powder, and 1/4 tsp salt. Sift if preferred to remove lumps.

    Cream butter and sugar

    In the (now-empty) large mixing bowl, beat 1/4 cup room-temperature unsalted butter with 1/2 cup granulated sugar until smooth and slightly aerated, about 2 minutes.

    Add egg and flavor

    Beat in 1 large egg until incorporated, then add 1 tsp vanilla extract. Add 1/4 cup hot espresso or strong coffee and 1/4 cup buttermilk (or milk) and mix to combine.

    Combine wet and dry

    With the mixer on low, add the chocolate dry mixture to the wet mixture in two additions, mixing just until no streaks of flour remain. The chocolate batter should be thick but pourable.

Baking & Marble Assembly

    Preheat and prepare pans

    Preheat oven to 350°F (175°C). Grease two 8- or 9-inch round cake pans with 1 tbsp vegetable oil or melted butter and dust with 1 tbsp flour, tapping out excess.

    Layer batters

    Spoon dollops of white and chocolate batters alternately into the prepared pans (or one pan if making a single-layer), about 1–2 tablespoons at a time, filling each pan about two-thirds full. Continue layering, creating concentric rings or random dollops.

    Create marble pattern

    Run a skewer or knife through the batter in a few places using a figure-eight motion to create a marbled effect. Do not over-swirl — you want distinct light and dark streaks.

    Bake

    Bake in the preheated oven for 25–32 minutes for 8–9 inch pans, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter). Rotate pans halfway through baking for even color if your oven has hot spots.

    Cool

    Allow cakes to cool in pans on a wire rack for 10–15 minutes. Run a knife around the edges, invert onto the rack, and remove pans. Let cakes cool completely (at least 1 hour) before frosting.

Almond Buttercream Frosting

    Beat butter

    In a clean large bowl, beat 1 cup room-temperature unsalted butter until smooth and pale, about 2–3 minutes.

    Add powdered sugar

    Gradually add 4 cups powdered sugar, about 1 cup at a time, mixing on low until incorporated to avoid a sugar cloud.

    Flavor and thin

    Add 1.5 tsp almond extract, 2 tbsp heavy cream (or milk), and 1/4 tsp salt. Beat on medium-high for 2–3 minutes until light, silky, and spreadable. Adjust thickness with more cream (1 tsp at a time) if too stiff or more powdered sugar if too loose.

    Crumb coat and chill

    Place one cooled cake layer on a serving plate or turntable. Spread a thin layer of buttercream to lock in crumbs, then stack the next layer. Chill for 15–20 minutes to set the crumb coat.

    Final frost

    Apply a generous final layer of almond buttercream to the top and sides, smoothing with an offset spatula or bench scraper for a clean finish.

Chocolate Ganache Drizzle & Finishing

    Make ganache

    Place 6 oz chopped semi-sweet chocolate in a heatproof bowl. Heat 1/4 cup heavy cream until steaming (do not boil) and pour over the chocolate. Let sit 2 minutes, then stir until glossy and smooth. Stir in 1 tbsp butter if using for extra shine.

    Cool to drizzle consistency

    Let ganache cool at room temperature for 10–15 minutes, stirring occasionally, until it thickens slightly but is still pourable.

    Drizzle and decorate

    Spoon or pour ganache into a squeeze bottle or use a spoon to drizzle over the center of the frosted cake, allowing some to run naturally down the sides. If desired, add extra buttercream piping or almond slivers as garnish.

    Set

    Refrigerate the cake for 15–30 minutes to set the ganache and firm the frosting before slicing. Bring to room temperature for 20–30 minutes before serving for best texture.
