Pat frog legs dry with paper towels. In a bowl combine soy sauce, Shaoxing wine, cornstarch, kosher salt and black pepper. Add frog legs and toss to coat. Marinate 15–20 minutes in the refrigerator (do not exceed 30 minutes).

Whisk together all-purpose flour, rice flour and baking powder in a medium bowl. In a separate small bowl lightly whisk the egg yolk into the cold club soda, then fold into the dry mix until just combined — a slightly lumpy, aerated batter is desirable. Keep batter cold in the refrigerator until ready to use.

Prepare batter

Pour vegetable oil into a medium skillet or wok to a depth of about 1 inch (or use a deep fryer) and heat to 350°F (175°C). If you don't have a thermometer, test by dropping a teaspoon of batter into oil — it should sizzle and float immediately, browning in about 30–45 seconds.

Heat oil

Remove frog legs from the marinade, letting excess drip off. Lightly dust each leg with a teaspoon of flour if surfaces are very wet, then dip into the cold batter to coat completely. Carefully lower into the hot oil in batches, avoiding overcrowding. Fry 2–3 minutes per side, or until outside is crisp and golden and internal temperature reaches 145°F (if you can probe). Total fry time is typically 4–6 minutes depending on size. Transfer to a wire rack set over a baking sheet to drain and keep warm.

Dredge & fry

While frog legs are resting, make the Szechuan bang bang sauce. In a small skillet dry-toast the Szechuan peppercorns over medium heat for 1–2 minutes until fragrant; grind finely using a mortar and pestle or spice grinder. In a small bowl combine ground Szechuan peppercorns, crushed dried red chilies (or a spoon of chili crisp), minced garlic, minced ginger, chili garlic sauce, hoisin, black vinegar, light soy sauce, sesame oil, sugar and 2 tablespoons water. Whisk until smooth. Taste and adjust heat/salt/sweetness as needed. Warm gently in the skillet for 30–45 seconds to bloom flavors, then remove from heat.

If you prefer a slightly thicker clingy sauce, simmer the sauce in a small saucepan over low heat 1–2 minutes to reduce slightly; add a half-teaspoon of cornstarch slurry (1/2 tsp cornstarch + 1 tsp cold water) if you want more body, and simmer until glossy.

Toss half of the fried frog legs in the warm Szechuan bang bang sauce to coat, or spoon the sauce over the plated legs. Reserve some sauce for service.

Make the QP mayo by stirring together mayonnaise, Sriracha, lemon juice and white pepper until smooth. Adjust heat with more Sriracha to taste. Thin slightly with 1–2 teaspoons water if needed for drizzling consistency.

Plate: arrange sauced frog legs on a serving platter. Drizzle or dot QP mayo over the legs or serve on the side as a dipping sauce. Sprinkle sliced scallions, toasted sesame seeds and cilantro leaves over the top for brightness and texture.

Serve immediately while hot and crisp with extra bang bang sauce and QP mayo on the side.
