Bring cheeses to temperature

Remove all cheeses from refrigeration 30–45 minutes before serving and keep them in their wrapping or on a tray in a cool room to come to room temperature — this allows flavors and textures to open.

Prepare cheeses for service

Unwrap cheeses and place each on a separate small cutting board or different zones of the main board. For the semi‑soft Syrah‑washed cheese, score a shallow crosshatch on the surface if very soft. Slice the firm alpine cheese into thin wedges (about 1/4 inch thick). For the goat cheese log, slice into 1/2‑inch rounds and leave a few intact for guests who prefer to spread.

Spoon the black cherry/dark fruit jam, fig jam, and whole grain mustard into small ramekins (1–2 inches). Place the honey in a very small ramekin or drizzle dish. Position these near the cheeses they pair best with: dark fruit jam near the washed‑rind cheese, fig jam near the alpine and goat cheeses, mustard next to the firm alpine cheese, and honey by the goat cheese.

Toast walnuts in a dry skillet over medium heat, stirring, until fragrant and lightly browned, about 3–4 minutes. Let cool. If desired, warm Marcona almonds for 1–2 minutes in the same pan. Arrange toasted walnuts, almonds, cornichons, dried apricots, and grapes in small piles around the cheeses, leaving walking space for guests to access each cheese. Place crackers in a neat fan or stack near the edge of the board for easy grabbing.

Bread & Garnish

If the baguette is not fresh from the bakery, warm it in a 350°F (175°C) oven for 5–8 minutes to refresh the crust. Slice the baguette on the diagonal into 1/2‑inch slices and arrange them in a loose fan on the board or on a separate bread plate. Lightly drizzle 1 tsp extra virgin olive oil over a few slices if desired.

Garnish the board with rosemary sprigs tucked between elements for aroma and visual contrast. Provide separate cheese knives — a soft‑cheese spreader for the goat cheese, a small knife for the washed‑rind, and a firm‑cheese slicer or plane for the alpine cheese.

Assembly & Serving

Select a large wooden board or slate. Place the three cheeses first, spaced apart to create zones. Add ramekins with condiments next to their suggested cheese pairings. Fill in gaps with fruits, nuts, cornichons, and crackers, balancing color and texture. Make sure each cheese has at least one dedicated knife and leave some empty space for guests to cut and place items. Serve with Syrah or another medium‑bodied red wine.
