If using a lemon twist, cut a thin peel and set aside for final garnish.

If using egg white for texture: perform a 'dry shake'. Add cognac, orange liqueur, lemon juice, simple syrup (if using), and the egg white to a cocktail shaker without ice.

Dry shake vigorously for 10–15 seconds to emulsify and build foam.

Add a generous handful of ice to the shaker (about 4–6 large cubes or 1 cup of ice).

Shake hard for 10–15 seconds more until the shaker is well chilled (the exterior will frost).

If not using egg white: add cognac, orange liqueur, lemon juice, and simple syrup to a shaker filled with ice and shake vigorously for 10–15 seconds.

Strain the cocktail through a fine mesh strainer (or Hawthorne strainer) into the prepared chilled, sugar-rimmed coupe or martini glass to remove ice shards and any foam lumps.
