Prepare glass and sugar (if using)

    Muddle sugar cube (optional)

    Place the sugar cube in an Old Fashioned (rocks) glass. Add 1 tsp water and 3 dashes of Angostura bitters onto the cube. Use a muddler to crush and dissolve the sugar until mostly broken down and combined with the bitters to form a syrupy paste. If using simple syrup instead, add 1/2 tablespoon syrup to the glass and skip muddling.

Build the cocktail

    Add 2 oz bourbon or rye whiskey to the glass on top of the sugar/bitters mixture (or the simple syrup and bitters).

    Add a large ice cube (or several large ice cubes) to the glass. Stir gently with a bar spoon for about 20–30 seconds (10–15 slow turns) until the drink is well chilled and slightly diluted. Stirring integrates the sugar and chills the whiskey without over-aerating.

Garnish and serve

    Express the orange peel over the drink: hold the peel with the outer (colored) side facing down over the glass and give it a quick twist to spritz the oils onto the surface. Run the peel around the rim if desired, then drop the peel into the glass as garnish.

    Optionally, add a maraschino cherry as a garnish. Serve immediately.
