    Chill glass

    Place a large wine glass or stemmed goblet in the freezer for 5–10 minutes or fill it with ice while you prepare the cocktail to chill.

    Combine base ingredients

    In a mixing glass or shaker filled with ice, pour 3 oz blood orange juice, 1 oz Aperol, 0.25 oz fresh lemon juice and 0.5 oz simple syrup. Stir gently for about 10 seconds to chill and lightly dilute.

    Assemble spritz

    Discard ice from the chilled serving glass (if used to chill). Add fresh ice to the glass (about 1 cup). Strain the mixed base over the ice into the glass.

    Add bubbles

    Slowly pour 3 oz chilled prosecco over the back of a spoon or down the side of the glass to preserve bubbles, then top with 1 oz chilled club soda. Stir once very gently to combine (1–2 slow turns).

    Garnish and serve

    Garnish with a blood orange wheel or twist and an optional mint sprig. Serve immediately with a straw or stirrer.

For a Pitcher (serves 6)

    Prepare pitcher

    Chill a large pitcher in the refrigerator or fill it with ice to cool while you measure ingredients.

    Mix base

    In the chilled or cooled pitcher, combine 18 oz blood orange juice, 6 oz Aperol, 1.5 oz fresh lemon juice and 3 oz simple syrup. Stir well to blend.

    Add bubbles and soda

    Add 18 oz chilled prosecco and 6 oz chilled club soda to the pitcher. Stir gently just once or twice to preserve effervescence.

    Serve

    Fill each serving glass with ice (about 1 cup per glass). Pour the spritz over the ice, garnish each glass with a blood orange wheel and an optional mint sprig, and serve immediately.
