Molten Chocolate Cakes

    Prepare Ramekins and Oven

    Preheat the oven to 425°F (220°C). Generously butter six 6-ounce ramekins and place them on a baking sheet.

    Melt Chocolate and Butter

    In a heatproof bowl set over (not touching) simmering water, combine the chopped bittersweet chocolate and 1 cup butter. Stir occasionally until fully melted and smooth. Remove from heat and let cool for 3–5 minutes.

    Whisk Eggs and Sugar

    In a medium bowl, whisk together 4 whole eggs, 2 egg yolks and 1 cup granulated sugar until the mixture is pale and slightly thickened (about 2–3 minutes by hand; 1 minute with a whisk attachment).

    Combine Mixtures

    Slowly fold the melted chocolate-butter mixture into the egg-sugar mixture until homogeneous. Sift 1 tablespoon flour and 1 teaspoon kosher salt over the batter and gently fold until just combined — do not overmix.

    Fill and Chill (optional)

    Divide the batter evenly among the prepared ramekins (about 5–6 oz batter each). For best results, cover and chill the ramekins for at least 30 minutes or up to 24 hours (this helps center the molten core). If baking immediately, proceed to the next step.

    Bake

    Bake on the middle rack for 10–13 minutes. The edges should be set and the centers still soft and slightly jiggly. Rotate the baking sheet halfway through if your oven bakes unevenly.

    Invert and Serve

    Let the cakes rest 1 minute after baking. Run a small knife around the inside edge of each ramekin to loosen, then invert each cake onto a dessert plate. Dust lightly with confectioners' sugar.

Chocolate Soil

    Preheat oven to 325°F (160°C) if not already warm from baking the cakes. In a medium bowl, whisk together 1 cup flour, 1 cup cocoa powder, 1/2 cup packed brown sugar, 1/4 cup granulated sugar and 1/2 teaspoon sea salt until evenly combined.

    Add the 6 tablespoons cold cubed butter to the dry mix. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits.

    Spread the mixture in an even layer on a parchment-lined baking sheet. Bake for 12–15 minutes, shaking the pan once halfway through, until fragrant and slightly crisp. Watch closely to prevent burning.

    Remove from the oven and allow to cool completely on the sheet; the mix will crisp up as it cools. Break apart into small crumbs (soil) and store in an airtight container until ready to plate.

Vanilla McFlurry (Vanilla Ice Cream with Crushed Mix-In)

    Infuse Milk and Cream

    In a medium saucepan, combine 1 cup whole milk and 2 cups heavy cream. Split the vanilla bean lengthwise, scrape the seeds into the milk mixture, and add the pod (or add 2 tsp vanilla extract later). Warm over medium heat until it just begins to steam — do not boil. Remove from heat and let steep for 15 minutes to infuse flavor.

    Temper Egg Yolks

    Meanwhile, whisk 4 egg yolks with 3/4 cup granulated sugar and a pinch of salt in a bowl until the mixture is pale and slightly thickened. Slowly pour about 1/3 of the warm vanilla milk into the yolk mixture in a thin stream while whisking constantly to temper the yolks.

    Cook Custard

    Pour the tempered yolk mixture back into the saucepan with the remaining milk. Cook over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the custard thickens enough to coat the back of the spoon (about 170–175°F / 77–80°C). Do not boil.

    Strain and Chill

    Strain the custard through a fine-mesh sieve into a clean bowl to remove the vanilla pod and any cooked egg bits. If using vanilla extract, stir it in now. Chill the custard in an ice bath until cool, then refrigerate until fully cold (2–4 hours or overnight) before churning.

    Churn Ice Cream

    Churn the chilled custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Fold in Mix-In

    Fold in 3/4 cup crushed crunchy mix-in (chocolate-covered cookie pieces or toffee) gently so the texture remains dispersed. Transfer the ice cream to a container and freeze for at least 2 hours to firm up, or serve soft immediately as a McFlurry-style soft scoop.

Assembly & Plating

    Place a bed of chocolate soil on each dessert plate (about 2–3 tablespoons). Invert a warm molten chocolate cake onto the soil so it sits partially on the crumbs.

    Spoon or scoop 2/3 cup (or one generous scoop) of vanilla McFlurry beside or slightly overlapping the cake. Sprinkle additional chocolate soil over the ice cream and around the plate for texture. Garnish with fresh berries if using and a light dusting of confectioners' sugar.

    Serve immediately so the cake is warm and the ice cream is cold, allowing the molten center to flow when cut.
