    Prepare glass

    Chill a rocks or margarita glass by filling it with ice and setting aside, or place in freezer for 5–10 minutes. Pour the ice out before serving. Run the lime wedge around the outer rim of the glass, then dip the rim into a small plate of coarse salt to coat. Set the glass aside.

    Juice lime

    Cut fresh limes and juice until you have 1 ounce (about one medium lime) of fresh lime juice. Strain if you prefer a smoother drink without pulp.

    Combine ingredients

    In a cocktail shaker, add 2 oz tequila, 1 oz orange liqueur, 1 oz fresh lime juice, and 0.5 oz simple syrup (omit if you prefer a drier margarita). Add a generous handful of ice (about 1 cup).

    Shake

    Secure the shaker and shake vigorously for 10–15 seconds until the shaker is cold to the touch and well-chilled. This both chills and dilutes the drink properly.

    Strain and serve

    Discard the ice from the chilled, salted glass (if you chilled with ice). Double-strain the shaken cocktail into the prepared glass over fresh ice (if desired) using a Hawthorne and fine strainer to catch ice shards and pulp. Alternatively, serve straight up without ice.

    Garnish

    Garnish with the remaining lime wedge on the rim. Serve immediately.
