Prepare ingredients
Use a vegetable peeler to remove zest from lemons and orange, avoiding the bitter white pith. Split the vanilla bean lengthwise to expose the seeds. Lightly bruise the cardamom pods with the flat of a knife to open them slightly.
Combine 2 cups of neutral spirit or vodka with the lemon zest, orange zest, split vanilla bean (both seeds and pod), bruised cardamom pods, whole cloves, dried bitter orange peel, gentian (if using), and dried rosemary in a clean 1–2 quart glass jar. Seal tightly.
Place the jar in a cool, dark place. Let the mixture macerate for 5–10 days, shaking gently once or twice daily to encourage extraction. Taste after day 5: citrus and vanilla should be pronounced; if flavor is too faint, continue to 10 days. Do not exceed 14 days, as prolonged infusion can bring excessive bitterness from pith or spices.
Sweetening & Clarifying
Once infusion reaches desired flavor, prepare a simple syrup by combining 1 cup sugar and 1 cup water in a small saucepan. Warm gently over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool to room temperature.
Strain the infused spirit through a fine-mesh sieve lined with cheesecloth or a coffee filter into a clean bowl or jar to remove solids. Press gently on solids to extract remaining liquid, but avoid forcing fine sediment.
Slowly blend the cooled 1:1 simple syrup into the strained infused spirit, tasting as you go. Start by adding half the syrup, stir, then add more to reach desired sweetness. The recipe proportions (2 cups spirit + 1 cup syrup) yield a medium-sweet liqueur. If desired, add up to the extra 0.25 cup water to slightly dilute and adjust proof.
If using honey for rounding, dissolve 1 tablespoon honey in 2–3 tablespoons warm water and stir into the liqueur now. Taste and adjust: you may add more syrup or a splash of water to fine-tune sweetness and strength.
Optional: For a clearer liqueur, let the blended liqueur rest in the refrigerator for 24–48 hours and decant/pour off clear liquid, or filter again through coffee filters until clear.
Bottling & Aging
Transfer the finished liqueur to clean bottles using a funnel. Seal tightly. Label with date and contents.
For best integration of flavors, age the bottled liqueur for at least 1–2 weeks before drinking. Flavors will mellow and harmonize; it continues to improve for several months.
Serve chilled, over ice, or use as a cocktail modifier. Store in a cool, dark place; refrigerated once opened will prolong freshness.
