Sage-honey syrup

Make syrup

In a small saucepan combine 2 tbsp honey and 2 tbsp water. Add 6 fresh sage leaves. Warm gently over low heat, stirring until honey dissolves and mixture is fragrant (about 3–4 minutes). Do not boil. Remove from heat and let steep for 10 minutes to infuse sage flavor.

Strain the syrup through a fine mesh sieve to remove the sage leaves. Press the leaves to extract as much liquid as possible. Let the syrup cool to room temperature before using. Reserve one small sage leaf for garnish if desired.

Build and shake

Fill a cocktail shaker with ice. Add 2 oz Tito's Handmade Vodka, 0.75 oz PAMA pomegranate liqueur, 0.75 oz fresh lime juice, 1.5 oz coconut water, and 0.5 oz (approx. 1 tbsp) of the prepared sage-honey syrup. Note: if you prefer sweeter, add up to 0.75 oz syrup.

Shake

Secure the shaker lid and shake vigorously for 10–12 seconds until well chilled.

Strain and top

Fill a Collins or highball glass with fresh ice. Double-strain the shaken mixture into the glass to remove ice shards. Top with 2 oz club soda, gently stir once to integrate.

Garnish & finish

Garnish with a lime wheel on the rim and a fresh sage sprig. If using, lightly toast 1 tsp coconut flakes in a dry skillet until golden (about 1–2 minutes), cool, and sprinkle a pinch on top of the foam or on the lime wheel for aroma and texture.

Serve immediately with a short straw so the sage aroma is noticeable as you sip.
