Prepare Produce

    Wash and prep

    Wash carrots, apple, lemon, thyme, mint and rosemary thoroughly. Peel the carrots and cut into 1-inch chunks. Core the apple and cut into quarters; leave the skin on for color and flavor. Roll the lemon firmly on the counter and then juice it; set aside 1 tablespoon of lemon juice for balancing flavors and a couple of lemon slices for garnish.

    Lightly bruise herbs

    Stem the mint leaves from larger stems and pull thyme leaves off 2 of the sprigs. Lightly clap the mint and thyme between your palms to bruise them and release aromatic oils. Reserve the remaining thyme and rosemary sprig for steeping and garnish.

Cook & Infuse

    Simmer infusion

    In a small saucepan combine 1 cup water, carrot chunks, apple quarters, reserved thyme sprig and rosemary sprig. Bring to a gentle simmer over medium heat. Reduce heat to low and simmer for 10 minutes — this extracts flavor and natural sweetness without overcooking the produce.

    After 10 minutes, remove from heat. Add the bruised mint leaves to the pot, cover, and let steep for 6–8 minutes to infuse mint aroma without turning bitter.

Strain & Sweeten

    Strain infusion

    Strain the warm infusion through a fine mesh sieve into a bowl or measuring cup, pressing lightly on solids to extract liquid. Discard or reserve the solids for another use (e.g., smoothies or compost). Let the liquid cool for 5 minutes.

    Sweeten and balance

    While the liquid is still slightly warm, whisk in 1 tablespoon honey or agave and the juice of 1/2 the lemon (about 1 tablespoon) until dissolved. Taste and add remaining lemon juice if you prefer a brighter, more tart profile. Add a pinch (about 1/4–1/2 tsp) coarse salt and up to 1/4 tsp freshly cracked black pepper to enhance the flavors.

Finish & Serve

    Chill and dilute

    Combine the infused concentrate with 1 cup cold water (adjust to taste for intensity). Add 1 cup ice to a pitcher or individual glasses and pour the beverage over the ice. Stir gently to combine.

    Garnish and present

    Pour into serving glasses and garnish each with a lemon slice and a small thyme sprig. If desired, slap a mint sprig against your palm to release aroma and add as garnish. Serve immediately.
