Prepare honey butter
In a small bowl, combine the softened unsalted butter (4 tbs) with 2 tablespoons honey and 1 teaspoon sea salt. Mash and whisk together until smooth and spreadable. Taste and adjust honey or salt as desired.

Toast bread
Preheat a skillet over medium heat or use a toaster/oven set to 375°F (190°C). Butter one side of each bread slice lightly with a little of the honey butter (reserve remaining). Place slices buttered-side down in the skillet or on a baking sheet and toast until golden brown and crisp at the edges, about 2–3 minutes per side in a skillet or 6–8 minutes in the oven, flipping once so both sides are golden. Remove and keep warm.

While still warm, spread about 1 tablespoon of the prepared honey butter on each slice so it melts into the warm toast. Reserve remaining honey butter for extra serving if desired.

Prepare cheese
If Fromager d'Affinois is chilled, let 8 oz sit at room temperature for 10–15 minutes so it becomes soft and easily spreadable but not runny. Slice or spreadable pieces can be used depending on preference.

Assemble
Divide the warmed, buttered toast among four plates. Using a knife or spoon, spread or place generous portions (about 2 oz per slice) of Fromager d'Affinois on each toast. The warmth from the toast will slightly soften the cheese and create a creamy layer.

Finish
Drizzle about 1/2 tablespoon to 1 tablespoon of pure maple syrup over each cheese-topped toast (total 2 tbs). Sprinkle the toasted chopped walnuts or pecans (optional, about 1 oz total) evenly across the four toasts. Finish with a light sprinkle of fresh thyme leaves (optional) and a crack or two of freshly ground black pepper (about 1 tsp total) to balance the sweetness.
