Preparation

    Rim the glass

    If using, rub a cut edge of the blood orange around the rim of a chilled rocks glass. Dip the rim into a shallow plate with the flaky sea salt and chile powder mixture to lightly coat. Set glass aside and chill.

    Juice citrus

    Juice the blood orange and lime. Strain the blood orange juice through a fine mesh strainer to remove pulp for a smoother cocktail.

Mixing

    Dry shake (if using egg white)

    In a cocktail shaker, add Los Javis Mezcal, Corralejo Silver Tequila, blood orange juice, lime juice, agave syrup, orange liqueur (if using), mole bitters, and egg white. Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify the egg white and create foam.

    Wet shake

    Add a generous handful of ice to the shaker. Shake hard for 12–15 seconds until the shaker is cold to the touch and well-chilled.

    Strain

    Double-strain the cocktail into the prepared rocks glass over one large ice cube or a few medium cubes. Double-straining (using a Hawthorne and fine mesh strainer) ensures a silky texture and removes ice shards and pulp.

Finish & Garnish

    Express the oils of a blood orange twist over the surface of the drink, then lay the twist or a fresh blood orange wheel on the rim or float it on top. Optionally, float a dehydrated blood orange slice for visual contrast. Serve immediately.

    Tasting notes: The smoky Los Javis mezcal and bright, peppery Corralejo tequila blend with sweet-tart blood orange and a hint of chocolate/ spice from the mole bitters for a layered, celebratory cocktail.
