Chill glass
Place a martini or coupe glass in the freezer for at least 10 minutes or fill it with ice water while you prepare the cocktail to ensure the glass is well chilled.

Prepare olives
Thread 2 olives onto a cocktail pick for garnish and place them aside. Reserve a third olive to eat or to muddle slightly if you prefer a stronger olive flavor.

Combine ingredients
Fill a mixing glass or cocktail shaker with the measured ice. Pour in 2.5 oz gin (or vodka), 0.5 oz dry vermouth, and 0.5 oz olive brine. If you like a dirtier martini, increase the olive brine by 0.25–0.5 oz.

Stir (or shake)
Stir the mixture with a bar spoon for 20–30 seconds until well chilled and slightly diluted. If you prefer a more aerated, colder cocktail, shake vigorously for 10–15 seconds and then strain.

Strain and garnish
Discard the ice or water from the chilled glass. Double-strain the cocktail into the chilled martini glass using a Hawthorne strainer (and fine strainer if desired). Garnish with the skewered olives. Optionally express a lemon twist over the surface and discard or drop into the drink.

Serve
Serve immediately while very cold. Provide the extra olive on the side if reserved.
