    Chill glass

    Place an old-fashioned glass in the freezer for a few minutes or fill it with ice and water while you prepare the drink to chill the glass.

    Combine ingredients

    In a mixing glass or stirring tin, add 2 oz SDCM barrel-aged Xicaru reposado tequila, 0.5 oz coffee liqueur, 0.25 oz vanilla cordial, and 3 dashes xocolatl (chocolate/mole) bitters. If your vanilla cordial is very mild or you prefer a sweeter cocktail, add 0.25 oz simple syrup (optional).

    Stir with ice

    Fill the mixing glass with large ice cubes and stir gently for 20–30 seconds (about 15–20 revolutions) until the mixture is well chilled and properly diluted (approximately 20–25% dilution target for spirit-forward stirred cocktails).

    Prepare serving glass

    Discard the chilling ice/water from the old-fashioned glass (if used) and add a fresh large ice cube or a couple of large cubes.

    Strain

    Strain the chilled cocktail from the mixing glass into the prepared old-fashioned glass over the large ice cube.

    Express garnish

    Take an orange peel and express the oils over the surface of the cocktail by holding it skin-side down above the drink and giving it a firm twist. Optionally, rub the peel around the rim of the glass and drop it into the drink as a garnish.

    Serve

    Serve immediately. Advise the drinker to sip slowly to enjoy the interplay of barrel-aged reposado, coffee liqueur, vanilla, and the chocolate-mole bitters.
