Caesar Twinkies (rolled filling)

    Bloom gelatin (optional)

    If using gelatin to help the filling hold its shape, sprinkle 1 tsp gelatin over 1 tbsp cold water in a small bowl and let sit 3–5 minutes until softened.

    Warm gelatin

    Gently warm the softened gelatin in the microwave for 5–8 seconds or over a double boiler until melted. Do not boil. Set aside to cool slightly.

    Make filling

    In a medium bowl combine 1/2 cup mayonnaise, 2 tbsp grated Parmesan, 1 tsp anchovy paste, 1 minced garlic clove, 1/2 tsp Dijon mustard, 1/2 tsp Worcestershire sauce, 1 tsp vinegar and 1/4 tsp black pepper. Stir until smooth and homogeneous. If using gelatin, whisk the slightly cooled melted gelatin into the filling until fully incorporated.

    Taste and adjust

    Taste the filling and adjust seasoning: more anchovy paste for saltiness/umami, lemon (from the salad ingredients) for brightness, or a pinch more Parmesan for cheesiness.

    Portion and roll

    Lay out a sheet of plastic wrap or parchment. Spoon roughly 2 tablespoons of the filling into a log shape (about 4–5 inches long) near one edge. Tightly roll the plastic wrap around the filling, twisting the ends to compress into a smooth cylinder (a 'Twinkie'). Repeat to make 4 rolls. Chill in the refrigerator for at least 30 minutes, or until firm enough to slice cleanly.

    Prepare lettuce

    Remove any wilted outer leaves from 1 head romaine. Cut the head into quarters lengthwise and rinse under cold water to remove grit. Spin or pat dry thoroughly. If you prefer bite-sized pieces, slice across into 1-inch ribbons.

    Make quick dressing (salad dressing from ingredients)

    In a small bowl combine 2 tbsp extra-virgin olive oil, juice of 1/2 lemon, 1 tbsp of the prepared Caesar filling (or 1–2 tsp anchovy paste + 1 tbsp mayo if you prefer separate), and 1 tbsp grated Parmesan. Whisk until emulsified. Taste and adjust with salt or more lemon if needed. Note: the pre-made filling is salty from anchovy paste, so add salt sparingly.

    Toss lettuce

    Place the dried romaine in a large bowl. Drizzle the dressing over the lettuce and toss gently to coat evenly. Add croutons (1 cup) if using.

    Slice Twinkies & finish

    Remove the chilled filling rolls from the refrigerator and unwrap. Slice each roll into 6–8 discs (about 1/2-inch thick) using a sharp knife. Place 2–3 discs per serving on top of the tossed lettuce. Sprinkle the remaining 2 tbsp grated Parmesan over the salad, drizzle 1 tsp olive oil, and finish with freshly ground black pepper (about 1 tsp) to taste.

Assembly & serving

    Divide the dressed lettuce among 4 plates (servings). Arrange the Caesar Twinkie slices attractively on each plate so they read as creamy, cylindrical 'twinkies' atop the salad.

    Serve immediately. Leftover rolled filling can be refrigerated up to 3 days, tightly wrapped.
