    Build and stir

    Place a mixing glass or shaker (without the shaker tin for shaking) on a bar mat. Add 2 oz Averna, 0.75 oz sweet vermouth, 0.25 oz orange liqueur, and 2 dashes Angostura bitters into the mixing glass.

    Add ice and chill

    Fill the mixing glass with plenty of fresh ice (enough to cool and properly dilute, roughly 6–8 large cubes). Stir gently with a bar spoon for 20–30 seconds (about 20–30 full rotations) until the mixture is well chilled and slightly diluted.

    Strain

    Strain the chilled mixture through a Hawthorne or julep strainer into a rocks glass over one large ice cube or into a chilled Nick & Nora glass without ice, depending on preference.

    Garnish and finish

    Express the oil from an orange peel over the surface of the drink by holding the peel with the outside facing down and giving it a firm twist about 2–3 inches above the drink. Rub the peel around the glass rim and drop it into the cocktail as garnish.

    Serve

    Serve immediately. Enjoy as a sipping cocktail or aperitivo.
