Method

Burger

  1. 1

    Form patty

Divide 6 oz of cold ground beef and form into a loose ball, then flatten into a 4-inch wide patty about 3/4-inch thick. Make a shallow indentation in the center with your thumb to prevent doming during cooking. Season both sides with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.

  2. 2

    Preheat pan

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot, about 3–4 minutes. Add 1 tsp vegetable oil and swirl to coat.

  3. 3

    Cook patty

Place the patty in the hot pan. Cook undisturbed for 3 minutes to develop a good sear. Flip and cook the second side for 2 minutes.

  4. 4

    Add cheese

Reduce heat to medium-low, place 1 slice American cheese on the cooked patty, cover the pan or tent with a lid for about 30–45 seconds until the cheese melts.

  5. 5

    Toast bun

While cheese melts, spread 1 tsp unsalted butter on the cut sides of the sesame bun and toast face-down in a separate skillet or the same pan edge for 30–45 seconds until golden.

Toppings & Sauce

  1. 6

Mix 1 tablespoon mayonnaise with 1/2 teaspoon yellow mustard in a small bowl. Spread the sauce evenly on the bottom half of the toasted bun.

  2. 7

Place the lettuce leaf on the sauced bun, add the cheeseburger patty directly on top, then layer 3 pickle slices and 2 thin red onion slices on the cheese. Top with the toasted bun crown and press gently to assemble.

Finish & Serve

  1. 8

Let the assembled burger rest for 1 minute so juices redistribute. Serve immediately while hot.
