Drain the 12 oz package of shirataki noodles into a colander. Rinse thoroughly under cold running water for 1 minute while breaking up any clumps. Transfer noodles to a clean kitchen towel or paper towels and press firmly to remove as much water as possible (about 1–2 minutes). Optionally cut noodles into shorter lengths with scissors for easier eating.

Prepare shirataki noodles

Heat a nonstick skillet over medium-high heat. Add the drained, dried shirataki noodles and dry-fry, stirring frequently, for 3–4 minutes until most steam has evaporated and the noodles begin to squeak. This step reduces excess moisture and improves texture.

Dry-fry noodles

Reduce heat to medium. Push noodles to one side of the skillet; add 2 tbs olive oil and 1 tbs butter to the cleared side. When butter melts, add 3 minced garlic cloves and sauté 30–45 seconds until fragrant (do not brown). Toss garlic with the noodles to coat evenly.

Finish noodles with oil & aromatics

Add 2 cups chopped fresh spinach to the skillet and cook 1–2 minutes until wilted. Pour in 1.5 cups creamy Alfredo sauce and stir to combine, coating the noodles and spinach. Simmer gently 2–3 minutes so sauce thickens and heats through. If sauce seems too thick, add up to 2 tbs water or unsweetened almond milk to loosen slightly.

Add greens and sauce

Stir in 1 cup finely grated Parmesan, 1 tsp salt, 1/2 tsp black pepper, 1 tsp lemon zest, and 2 tbs chopped parsley. Taste and adjust seasoning (add red pepper flakes if using). Heat 30–60 seconds more until cheese melts into the sauce. Remove from heat.

Season & finish

Divide the pasta between 2 plates or bowls. Top with additional grated Parmesan and a sprinkle of parsley. Serve immediately.

Plate

If using pre-cooked grilled chicken, season sliced chicken (8 oz) lightly with 1/4 tsp salt, 1/8 tsp black pepper, and 1 tsp olive oil. Warm a small skillet over medium heat and add chicken slices. Heat 1–2 minutes per side until warmed through and slightly golden. Alternatively, warm in the oven at 325°F (160°C) for 6–8 minutes.

Season & reheat grilled chicken

Toss warmed chicken with the finished pasta in the skillet for 30 seconds to combine, or plate pasta and top with chicken slices.

Add to pasta

In a small saucepan over medium-low heat, melt 2 tbs unsalted butter. Add 1 minced garlic clove and sauté 20–30 seconds until fragrant. Pour in 1 cup heavy cream and bring just to a simmer, stirring. Add 2 oz softened cream cheese and whisk until smooth. Gradually whisk in 3/4 cup grated Parmesan until melted and the sauce is silky. Season with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat and use immediately (makes ~1.5 cups).

In a medium saucepan over medium heat, add the steel-cut oats and dry-toast, stirring frequently, for 2–3 minutes until fragrant. This step enhances flavor but can be skipped.

Toast oats (optional)

Add 3 cups water and a pinch (1/4 tsp) salt to the saucepan and bring to a gentle boil over medium-high heat.

Reduce heat to low and simmer, uncovered, stirring occasionally, for 20–25 minutes until oats are tender but still chewy. If mixture thickens too much, stir in up to 1/4 cup water or almond milk to reach desired consistency.

Stir in 1 cup unsweetened almond milk (or low-fat milk) and cook for another 1–2 minutes to warm through. Remove from heat.

Allow oats to cool for 1–2 minutes so they are warm but not piping hot (to prevent denaturing the yogurt/protein powder).

Whisk 1/2 cup plain nonfat Greek yogurt into the warm oats until fully incorporated for added creaminess and protein.

If using protein powder, mix 1 scoop with 1–2 tablespoons of almond milk until smooth and then stir into the oats. Taste and adjust consistency with a splash more almond milk if needed.

Stir in 1 tablespoon ground flaxseed for omega-3s and fiber.

Add 1 teaspoon natural nut butter and 2 tablespoons chopped almonds for texture and healthy fats; stir to combine.

Fold in 1/2 cup fresh blueberries (or raspberries) and 1/2 cup diced apple.

Add 1/2 teaspoon ground cinnamon and 1/4 teaspoon pure vanilla extract; stir to distribute spices evenly.

Sweeten, if needed, with a few drops of liquid stevia or a small amount of monk fruit sweetener to taste. Aim for minimal added sweetness to keep the glycemic load low.

Spoon the oatmeal into bowls. Top with the reserved toasted almonds and garnish with 2 fresh mint leaves per serving if desired.

Preheat oven to 325°F (160°C). Line the bottom of a 6-inch round cake pan with parchment paper and lightly grease the sides with butter or nonstick spray.

Prepare and preheat

In a medium bowl whisk together 1.5 cups blanched almond flour, 0.5 cup granulated erythritol, 1 tsp baking powder, and 1/4 tsp fine sea salt. Break up any lumps in the almond flour with the whisk or a fork.

Dry ingredients

In a separate large bowl whisk 4 large eggs until frothy, about 20–30 seconds. Add 1/4 cup melted cooled unsalted butter, 1/4 cup full-fat sour cream, 1 tsp vanilla extract and 2 drops liquid stevia (if using). Mix until combined and slightly aerated.

Wet ingredients

Fold the dry mixture into the wet mixture with a spatula until just combined and no large lumps remain. Scrape batter into the prepared 6-inch pan and smooth the top. Batter will be thicker than traditional wheat-based batter.

Combine batter

Bake in the preheated 325°F (160°C) oven for 28–34 minutes, or until the top is golden and a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Start checking at 25 minutes to avoid overbaking.

Bake

Remove cake from oven and let cool in the pan for 10 minutes. Run a knife around the edge, invert onto a wire rack, remove parchment, then invert again so the top is up. Cool completely (at least 45 minutes) before frosting; chilling 20 minutes in the fridge makes it easier to frost.

Cool

Place 3 oz finely chopped unsweetened baking chocolate in a heatproof bowl so it melts evenly.

Chop chocolate

Warm 1/4 cup heavy cream in a small saucepan over medium-low heat until it just begins to simmer around the edges (do not boil). Immediately remove from heat.

Heat cream

Pour the hot cream over the chopped chocolate. Let sit undisturbed for 1 minute, then stir gently until smooth and glossy. Whisk in 2 tbsp powdered erythritol, 1 tbsp softened unsalted butter, 1/4 tsp vanilla extract and a pinch of sea salt. Taste and adjust sweetness with more powdered sweetener if desired. If the ganache is too thin, chill 10–15 minutes, stirring occasionally, until spreadable.

Make ganache

Place the cooled cake on a serving plate. Using an offset spatula, spread a thin crumb coat of ganache over the cake and chill 10 minutes to set. Apply a final layer of ganache, smoothing the top and sides. If desired, create texture with the back of a spoon.

Frost cake

Scatter 2 tbsp toasted sliced almonds around the top edge and place 6 fresh raspberries on the center of the cake. Lightly dust with 1/2 tsp unsweetened cocoa powder for presentation. Keep raspberries as a garnish only; they add a small amount of carbs.

Slice into 6 small slices. Serve at room temperature or slightly chilled. Store leftover cake covered in the refrigerator for up to 5 days. To soften, leave at room temperature 20–30 minutes before serving or warm a slice 10–12 seconds in the microwave.

Preheat and line pan

In a large mixing bowl, whisk together the almond flour, golden flaxseed meal, baking powder, baking soda, and salt until evenly combined and any lumps in the almond flour are broken up.

In a separate medium bowl, crack the eggs and whisk until homogenous and slightly frothy (about 20–30 seconds). Add the melted butter, sour cream, apple cider vinegar, and warm water; whisk until smooth. The vinegar helps give lift with the baking soda.

Temper the wet with the dry: pour the wet mixture into the dry ingredients. Fold gently with a rubber spatula until combined. Scrape the bowl sides and bottom. The batter will be thicker than regular bread batter but still spoonable — not as dense as cookie dough.

Transfer the batter into the prepared loaf pan, smoothing the top with a wet spatula or the back of a spoon. If using add-ins, gently fold herbs into the batter before transferring.

If using a topping, brush the top lightly with a little extra melted butter (about 1 teaspoon) and sprinkle the sesame seeds or everything seasoning evenly over the top.

Place the loaf on the middle rack and bake at 350°F (175°C) for 35–45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean with a few moist crumbs. Oven times vary — start checking at 30 minutes.

If the top browns too quickly before the center is set, tent loosely with aluminum foil for the remaining bake time.

Remove the loaf from the oven and let rest in the pan for 10 minutes. Use the parchment overhang to lift the loaf out onto a wire rack and cool at least 30 minutes before slicing. Cooling finishes the set; slicing warm can cause crumbling.

Store: keep wrapped in plastic or in an airtight container in the refrigerator for up to 5–7 days, or slice and freeze for up to 3 months. Reheat slices in a toaster or oven until warm and slightly crisp.

Warm the dairy

While the dairy warms, whisk 4 egg yolks and 3 tablespoons granulated erythritol in a heatproof bowl until the mixture is pale and slightly thickened, about 1–2 minutes.

Whisk yolks and sweetener

Slowly pour about 1/3 of the hot cream mixture into the yolks while whisking constantly to temper. Then pour the tempered yolk mixture back into the saucepan with the remaining hot cream, whisking continuously.

Temper the yolks

Return the saucepan to medium-low heat and cook, stirring constantly with a wooden spoon or heatproof spatula, until the custard thickens and coats the back of the spoon (target temperature 170–175°F / 77–80°C). Do not let it boil.

Cook to custard

Remove from heat and immediately strain the custard through a fine-mesh sieve into a bowl to remove any cooked egg bits. Stir in 1 teaspoon vanilla extract and a pinch of fine sea salt. If making chocolate variation, whisk in 2 tablespoons unsweetened cocoa powder now until fully incorporated.

Strain and flavor

Taste a small spoonful (cool slightly) and, if desired, adjust sweetness with a few drops of liquid stevia or monk fruit to taste. Remember that chilling slightly reduces perceived sweetness.

Sweetness adjustment (optional)

Cover the bowl with plastic wrap pressed directly onto the custard surface to prevent a skin from forming. Chill in the refrigerator until fully cold, at least 4 hours or overnight. For faster chilling, divide into a shallow container.

Chill

Once the custard is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (usually 20–30 minutes). If you did the cocoa variation, it will churn into chocolate keto ice cream.

Churn

During the last 2–3 minutes of churning, add 1/4 cup sugar-free chocolate chips and/or 1/4 cup crushed toasted pecans or walnuts if using so they incorporate evenly.

Add mix-ins

Transfer churned ice cream to an airtight container, press a piece of parchment directly on the surface to minimize ice crystals, seal, and freeze for at least 2 hours to firm up to scoopable texture.

Harden

When ready to serve, let the container sit at room temperature for 5–10 minutes to soften slightly for easier scooping. Scoop and serve plain or with additional toasted nuts or a few sugar-free chocolate chips on top.

Store leftover keto ice cream in the freezer for up to 2 weeks for best texture. To reduce ice crystals, keep the container tightly sealed and avoid repeated thaw/refreeze cycles.

Divide the 1 lb ground beef into 4 even portions (about 4 oz each). Gently form into patties about 3/4-inch thick, making a slight indentation in the center of each to prevent doming. Season both sides of each patty with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder divided evenly across patties.

Form and cook patties

Heat a large cast-iron skillet or nonstick pan over medium-high heat. Add 1 tablespoon unsalted butter and let it melt and sizzle. Place the patties in the hot skillet (do not overcrowd). Cook for 3–4 minutes on the first side without moving to get a good sear.

Flip the patties and immediately top each with a cheddar cheese slice. Cook another 2–3 minutes for medium (adjust time 1–2 minutes less for rare, longer for well done). Remove patties to a plate and tent with foil to keep warm.

Using the same skillet (wipe excess grease if needed, leave some for flavor), reduce heat to medium-low and add a little butter if pan is dry. Crack 4 large eggs and fry to desired doneness — for a runny yolk cook sunny-side up or over-easy ~2–3 minutes; for fully set yolk cook 4–5 minutes. Season eggs with a pinch of salt and pepper. Remove and keep warm.

Fry eggs

Slice avocado in half, remove pit, and slice thinly. Keep tomato and red onion sliced and ready.

Assemble burgers using 2 large lettuce leaves as bun halves (one top, one bottom). Spread about 1 tablespoon mayonnaise (from the 1/4 cup) on the bottom leaf, place a cheese-topped patty, add sliced avocado, a fried egg, tomato slice, red onion, pickles, and a thin smear of Dijon mustard and sugar-free ketchup if desired. Top with the other lettuce leaf and secure with a skewer if helpful.

Prepare lettuce buns by choosing the largest, intact leaves. Rinse and pat dry thoroughly so they hold fillings without leaking. If leaves are small, double them (two leaves per bun) to make a sturdier base.

Mix remaining mayonnaise (about 3 tablespoons left) with Dijon mustard (1 tsp) and sugar-free ketchup (1 tbsp) if you want a quick burger sauce. Adjust salt to taste. Use the mixture as a spread on the lettuce 'buns'.

Prep zucchini

In a shallow bowl, whisk 1 beaten egg. In another bowl combine 3/4 cup almond flour, 1/2 cup grated Parmesan, 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper. Dip each zucchini stick into the egg, letting excess drip off, then press into the almond-Parmesan mixture to coat well. Place on the prepared baking sheet in a single layer.

Lightly brush or mist the coated zucchini sticks with 2 tablespoons olive oil so they crisp in the oven. Bake for 12–15 minutes, turning once halfway, until golden and crisp. For extra crispness, broil 1–2 minutes at the end while watching closely. Remove and let cool 2 minutes before serving.

Whisk together 1/4 cup sour cream, 1/4 cup mayonnaise, 1 teaspoon fresh lemon juice, 1/4 tsp garlic powder, 1/4 tsp smoked paprika, and 1/8 tsp salt in a small bowl. Taste and adjust seasoning. Chill for 10 minutes for flavors to marry. Use as a dip for zucchini fries or spread on burgers.
