Sauté aromatics
Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. When butter melts and begins to foam, add the minced shallot. Cook, stirring, for 1–2 minutes until translucent but not browned.
Brown mushrooms
Add the mushrooms to the skillet in a single layer. Increase heat to medium-high if necessary so they sizzle. Let mushrooms cook undisturbed for 2–3 minutes to develop color, then stir and cook another 3–4 minutes until they release moisture and begin to brown. Season with 1 1/2 teaspoons salt, 1/2 teaspoon black pepper, and the thyme.
Sauce
Make roux
Sprinkle the tablespoon of flour evenly over the mushrooms and stir to coat. Cook the flour for 1 minute, stirring constantly, so the raw flour taste cooks out.
Add stock and cream
Gradually pour in the cup of stock while stirring to deglaze the pan and incorporate the flour. Bring mixture to a gentle simmer and let it reduce for 2–3 minutes.
Finish sauce with dairy and seasoning
Reduce heat to low. Stir in the heavy cream and softened cream cheese until smooth and combined. Add the grated Parmesan, Worcestershire sauce, remaining 1 1/2 teaspoons salt (adjust to taste), 1/2 teaspoon black pepper, and lemon juice. Simmer gently for 1–2 minutes until sauce thickens to coat the back of a spoon. Taste and adjust seasoning.
Finishing & garnish
If sauce becomes too thick, add up to 1–2 tablespoons extra stock or water to reach desired consistency. Stir in chopped parsley and optional red pepper flakes. Remove from heat and let rest 1 minute so flavors meld.
