Place the Buitenverwachting Sauvignon Blanc in the refrigerator for at least 2 hours before serving. If you need it chilled quickly, put the bottle in an ice bucket filled with ice and water for 20–30 minutes. Ideal serving temperature is 8–10°C (46–50°F). Use a wine thermometer if desired to confirm temperature.

Chill the bottle

Choose clean white-wine glasses with a narrower opening to concentrate aromas. Make sure glasses are at room temperature and free of detergent residue. If you prefer a slightly cooler glass, chill them briefly in the fridge (10–15 minutes).

Select glassware

Inspect the bottle for sediment or cork quality. Cut and remove the foil cleanly with a foil cutter or small knife. Use a waiter’s corkscrew to remove the cork slowly, keeping the bottle steady. Wipe the bottle lip with a clean cloth to remove any cork particles.

Pour a small tasting pour (about 30–60 ml) into one glass and swirl gently to assess the wine’s color, aroma and palate. After tasting and approving, pour 120–150 ml per guest. Hold the bottle at the base and tilt the glass slightly; stop pouring when the glass is about one-third full. Rotate the bottle at the end of the pour to avoid drips.

If serving to multiple guests, keep the remaining bottle in the ice bucket to maintain temperature. Replace ice/water as needed.

Rinse fresh green figs, gooseberries and apple slices under cold water. Quarter the figs, halve the gooseberries if large, and slice the green apple thinly. Arrange the fruit on a small serving board or plate. These fruits echo the wine’s green-fig and gooseberry aromas and provide a fresh contrast to its body.

Place the goat cheese on the board. Drizzle with 1 tsp extra-virgin olive oil and grind a little fresh black pepper over it. Arrange crackers or baguette slices alongside the cheese. The mild tang of chèvre complements the crisp acidity and citrus-green notes of the Sauvignon Blanc.

Assemble cheese & crackers

Serve the accompaniments alongside the wine and encourage tasting combinations: wine with fig, wine with apple and cheese, or wine with gooseberry for varied contrasts.

Storage after opening: Reseal the bottle with its cork or a reusable stopper and keep it in the refrigerator. Consume within 3–5 days for best quality; the wine’s fresh varietal aromas will begin to fade after that.
