Prepare and preheat

Preheat oven to 350°F (175°C). Lightly grease an 8-inch square baking pan (or 6 individual 8-oz ramekins) and line the bottom with parchment for easy removal.

Whisk together dry ingredients: in a medium bowl sift or whisk the all-purpose flour, Dutch-process cocoa powder, baking powder, and salt until well combined.

Beat eggs and sugar: in a large bowl, whisk the granulated sugar and eggs vigorously (or use an electric mixer on medium-high) until the mixture is pale, slightly thickened and holds a ribbon when the whisk is lifted, about 3–4 minutes.

Combine wet ingredients: whisk the milk, vegetable oil, and vanilla in a small bowl. Gradually fold the wet mixture into the egg-sugar mixture until combined.

Add dry ingredients: gently fold the dry flour-cocoa mixture into the wet batter in two additions, folding just until no streaks remain. Do not overmix to keep the sponge light.

Bake: pour the batter into the prepared pan (or divide among ramekins). Smooth the top and bake in the preheated oven for 18–22 minutes for ramekins or 25–28 minutes for an 8-inch pan, until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.

Cool slightly: remove from oven and let the sponge rest 10 minutes. If using an 8-inch pan, invert onto a rack or cut into portions; if using ramekins, serve warm in the ramekins.

Belgian Chocolate Sauce

Warm the cream and sugar: in a small saucepan over medium heat, combine the heavy cream and light brown sugar. Stir occasionally and heat until the mixture is just simmering at the edges (do not boil).

Melt chocolate: place the finely chopped Belgian dark chocolate in a heatproof bowl. Pour the hot cream mixture over the chocolate and let sit 1 minute to soften.

Emulsify sauce: whisk gently from the center outward until the chocolate is fully melted and the sauce is smooth and glossy. Add the unsalted butter, vanilla extract, and salt, whisking until incorporated and silky. If the sauce is too thick, whisk in 1–2 teaspoons of warm water or additional cream to reach desired pourable consistency.

Keep warm: transfer the sauce to a small warm bowl or a thermos to keep it pourable while serving. Rewarm gently if needed; do not boil.

To Finish / Serve

Plate: if you baked in a pan, cut the sponge into four portions and place on serving plates. If you baked in ramekins, keep pudding warm in the ramekins.

Sauce and garnish: spoon or pour 2 to 3 tablespoons of warm Belgian chocolate sauce over each portion so it soaks slightly into the sponge. Dust lightly with powdered sugar and add a few fresh raspberries or a dollop of whipped cream, if desired.

Serve: serve immediately while sponge and sauce are warm. Leftover sauce can be refrigerated and gently reheated; sponge is best served the day it is made.
