Build the drink

Fill a large wine or stemmed glass about three-quarters full with ice cubes to chill the glass and keep the drink cold.

Add Aperol

Measure and pour 2 oz Aperol evenly over the ice.

Add Prosecco

Measure and gently pour 3 oz chilled Prosecco into the glass. Pour slowly to preserve carbonation.

Top with soda

Add 1 oz chilled soda water (club soda) to lengthen and brighten the drink. Adjust soda to taste if you prefer a lighter spritz.

Stir gently

Using a bar spoon, give the cocktail one or two gentle slow stirs to combine the ingredients without flattening the Prosecco.

Garnish and serve

Garnish with one fresh orange slice or a long orange twist placed on the rim or floated in the glass. Serve immediately while cold and fizzy.
