Prep potatoes

Place peeled and cut potatoes in a large pot and cover with cold water by about 1 inch. Add 1 tablespoon kosher salt. Starting with cold water ensures even cooking.

Boil until tender

Bring to a vigorous simmer over high heat, then reduce to medium-low and simmer gently until potatoes are very tender when pierced with a knife, about 15–20 minutes depending on chunk size.

Heat milk and butter

While potatoes cook, combine milk and unsalted butter in a small saucepan and warm over low heat until butter melts and mixture is hot but not boiling. Keep warm.

Drain and dry

Drain potatoes thoroughly in a colander. Return drained potatoes to the hot pot and set over the stove on the still-warm burner for 30–60 seconds, shaking occasionally, to evaporate excess moisture. This yields drier, fluffier potatoes.

Add cream cheese

Cut cream cheese into pieces and add to the potatoes. Use a potato ricer or food mill for best texture; if using a ricer, press potatoes into a large bowl. If using a stand mixer or electric hand mixer, start on low to avoid gluey texture.

Whip with warm milk mixture

With riced potatoes in a bowl or in the mixer on low, gradually add warm milk and butter mixture while whipping until silky and fluffy. Stop and scrape sides as needed. You want a smooth, whipped texture but not runny—add all the milk mixture and adjust if needed.

Roast or sauté garlic

Option A (roasted, mellower): Preheat oven to 400°F (200°C). Toss peeled garlic cloves with 1 tablespoon olive oil, place on a small piece of foil or in a small oven-safe dish, and roast 20–25 minutes until golden and soft. Option B (quick sauté, brighter): In a small skillet over medium heat, warm 1 tablespoon olive oil and sauté garlic cloves, smashed or finely minced, for 1–2 minutes until fragrant and just starting to color—do not burn.

Mash garlic into potatoes

Once garlic is soft (from roasting) or sautéed and fragrant, mash or press it finely with a fork or microplane. Fold the garlic into the whipped potatoes thoroughly so the garlic flavor is evenly distributed.

Season and adjust

Season the whipped garlic potatoes with 1 teaspoon salt and 1 teaspoon freshly ground black pepper. Taste and adjust seasoning—add more salt, pepper, or a splash of warm milk if you want a creamier consistency.

Garnish and serve

Transfer whipped garlic potatoes to a serving bowl. Dot with an additional 1 tablespoon unsalted butter if desired, sprinkle with chopped fresh chives (about 2 tablespoons) for color and mild oniony flavor, and serve immediately while hot.
